I kind of looked up and realized that this is the last week of summer. Um, that was enough to just freak me out.
Where did the Summer go?? Whaaaaat hapenned!!!
It actually was dark around 8 last night. Here in Seattle there was still light in the sky as late as 10PM all summer. And today, while it was in the low seventies, there was a distinct crispness to the air, and the wind has been really blowing for days. It is undeniable that fall is right around the corner.
So for the last remaining week, I will try to hold on to Summer!
I went down to my pretty little vegetable garden and harvested the last of the veggies, realizing that I will soon have to clear out all of the dying remains and prepare the soil again for the fall. What the….??
I found lettuces, cauliflower, cherry tomatoes, zucchini and fresh herbs. I also found cucumbers, avocado and fresh corn in my produce drawer. I thought that I would make a pretty chopped salad to use up all the gorgeous late summer produce. I also happened to have some beautiful smoked trout that I added to the salad. If you have never tried smoked trout- look out! It is SO good!!
If you are not into trout, then maybe look into adding salmon or grilled chicken or steak- those would be great too!
To make the salad, this is what you do:
In a small container or mason jar combine the ingredients for the vinaigrette. Shake to combine and season to taste.
On a large cutting board, pile all of your lettuces and vegetables.
Using a large knife, chop everything up to a desired size (bite sized- not too small!)
Add to a bowl and toss with just enough dressing to coat the vegetables and lettuce.
Serve in bowls and add the protein to the top.

so fresh! i love the vinaigrette too!
Thanks Heather- super simple to put together too 🙂
This is timely! I just watched a PBS special on photo and micro nutrients in cruciferous vegetables, specifically chopped salads. As I’m not particularly good at thinking up salads, this one of your’s looks fantastic.
Thanks Vicki- that makes me feel even better about eating this salad! Plus, I hate to be cliche- but you can all this stuff really did taste “garden fresh” It is like the difference between when you eat a “real” strawberry and a grocery store strawberry. Big.
Ummmmmm, YES.
Thanks Bev 🙂
I had the same reaction this weekend when I realized Labor day is just around the corner. Wow, did summer fly!
What I wouldn’t give to have a huge bowl of that in my fridge right now…
I too cannot believe it is the last week of summer. Love this salad….where did the time go??!!
It’s the last week of summer?? HELP! 🙂 This salad looks great–and I definitely have plenty of zucchini to throw into it!
great way to get in those veggies!
I love how fresh and colorful this salad looks!
What a beautiful salad, Heather!! That cauliflower is so pretty too!
Thank you Julie 🙂
This is so full of goodness! Yum!
HEALTHY goodness!! I am really trying Katrina!
I love a GOOD salad! I’m like Elaine from Seinfeld … she always ordered the “Big Salad” on the show 🙂
BTW with the fall crispness in the air …my beloved ‘soup season’ is on the horizon, you know I’m excited about that!
I love elaine and that big salad!!
A beautiful fresh salad would be terrific about now!
Yummy – this looks so good. We still have weeks of garden left here – assuming an early frost doesn’t get us!
I am missing Seattle, my family & friends and the crisp air you feel this time of year that lets you know that fall is just around the corner. I am currently living in Texas and fall is not in sight. It’s still sticky and hot here. 🙁 Heather I am looking forward to more of your pumpkin recipes this fall.
somewhat envious of your “little veggie garden”. I have been successful with herbs, but I, admittingly, have a black thumb. You have inspired me to try, try again! Smoked trout – I am going to take your word for it and give it a try.
Like your new website. Will make time to play around with it on a larger screen tomorrow. Also love that salad, I think that will be dinner tomorrow night. Thanks, SSJ
