Greece is stunning, beautiful, mesmerizing. I can’t wait to tell you all about it and post lots of teeny tiny pictures of it! I am also getting so inspired with the amazing (understatement of the century) food here. Getting into the kitchen and seeing how all of this fresh, unique, truly flavorful food affects my cooking will be exciting for me.
But because I am in Greece, I have to at least post this recipe with figs (which are everywhere here). It is also just in time for the weekend (my favorite time for pancakes!) and will maybe satisfy a sweet tooth or two…
Chocolate pancakes. With fresh figs cooked right into them. Heavenly.
I topped them with powdered sugar and honey, but they would also be great with butter and syrup. I know this because I tried them both ways obviously….
You could also add chocolate chips to the batter. That would probably be pretty dang good. You know- little oozy bits of melted chocolate? Mmmm….
But even as-is, they are moist and chocolaty without being to sweet- I wanted to make sure that I left room for the powdered sugar or syrup. Plus, I like the fresh and subtle sweetness of the figs with the dark chocolate.

To make these pancakes, this is what you do:
Combine all of the dry ingredients in a large bowl.
Add the egg, butter and milk and beat together until well combined.
Preheat a non-stick pan or griddle, grease it with a little butter or vegetable oil.
Spoon the batter onto the hot pan, and let it cook until there are little bubbles on the pancake.
Put a few fig slices down on the pancake and let them cook a few more seconds.
Flip and finish cooking, then pile in a plate.
Serve fig side up with powdered sugar and honey or syrup.

- -3 Tablespoons sugar
- -1 tsp baking soda
- -½ tsp salt
- -1 egg
