Hi guys. I have to tell you some stuff before we talk about this soup.
One, it never fails that if I tell you I am going to be on TV at a certain time and on a certain day, then something will go a wry and I won’t be and I will blush furiously and hotly with embarrassment. And then I will laugh out of uncomfortableness.
While “Rescue my Renovation” will indeed be premiering Wednesday night on DIY, MY six episodes will not begin airing until next week, Wednesday March 6th. Don’t worry- I will remind you. Blush, blush….
The other thing, the more important thing in my life, is that our puppy Mason is not well.
He has been having trouble with his hind legs for months, and we mistook it for clumsiness due to his age (16 months on Friday) and size (240 pounds). But Saturday morning he strangely slipped on the kitchen floor and within seconds had lost use of all of his legs. He has spent the last 4 days at an Animal Hospital where they are trying to figure out what is wrong with him, but he has not regained use of any of his limbs. After extensive testing, it seems most likely that he was born with a degenerative disease in his spine (a birth defect) and that it is most likely non-curable even with surgery and treatments. While we hold out hope for a small miracle to squeak it’s way in this week, we are also preparing for the worst. Any loving energy you have to spare would be so appreciated.
I have just been sitting in limbo all week, and trying to keep a brave face on for my little girls and take care of my family the best that I can. I made this soup last night because it seemed like the kind of thing I should do- make cozy soup. Plus I had 3 pounds of trader Joe’s organic zucchini that was looking tired and I didn’t want to waste it. I’m glad I didn’t, because this was just what I needed. Tasty, hot and comforting.
I hope it lends you a little warmth too.
To make this soup, this is what you do:
In a large heavy pot, melt the butter over medium heat. Add the onions and sweat for 5 minutes. Add the zucchini and stir to mix it in.
Add the water and put a lid on the pot, reducing the heat to low. Simmer the zucchini for 20 minutes until very soft.
Puree the soup on high in batches in a blender. Add them back to the pot.
Add the lemon juice and stir well to combine. Add the cream and stir it in with a spoon. Season to taste with kosher salt.
Garnish with fresh chives and a little lemon zest if you like.

Oh, Heather. I’m so sorry to hear about your dog. Did we meet him last summer? I’m trying to remember. But again that wasn’t my most shining night. 😉
xoxo.
yeah- Bev- the big guy would have only been about 6 or 7 months then, but yes that was him- thank you for the nice words 🙂
I am SO sorry Heather, to hear about Mason. I’ve so enjoyed your blog and also seeing his adorable pics along the way. We’ve always had very large German Shepherds who’ve had similar issues. I think it’s especially heartbreaking when it’s an incurable mobility problem and they are otherwise “healthy”. I’m sending good and positive thoughts your way. Sigh…
Thank you so much Angela.
Oh Heather! I’m so sorry about Mason. I am sending you all my good energy and loving thoughts. I’m praying for a small miracle. Great big hugs to you!
thank you so much Megan 🙂
Wow. That is a very hard thing to go through. Muster your strength and know you are doing all you can. And in his own way, Mason does, too.
Thank you Abbe, I hope so 🙂
This is a cozy soup – can’t wait to make it. I love the chives and lemon zest garnish.
I’m so sorry to hear about Mason … hugs and strength to you all right now.
Heather, I’m so sorry about Mason. I live fairly close to UC Davis which has one of the top vet hospitals with cutting edge treatment in the country. If you want to email me, I’ll give you direct numbers to have your vet call. A school chum is well connected.
Read the whole thing. There’s good news at the bottom. http://www.vetmed.ucdavis.edu/vmth/small_animal/neurology/newsletters/disc_disease.cfm
I am a firm believer that dogs are really furry humans, so it breaks my heart to hear of his condition. Mason is very lucky to be part of such a wonderful family as yours. I’m sure he is receiving the best care possible.
And keep on cooking. Home cooked food not only feeds the body, it feeds the soul.
Thank you kelley. I always feel that way too 🙂
This looks soooo fabulous!
Oooo, I bet this soup is so amazing! I can practically taste it’s goodness from here 🙂
Can I come over for lunch? 🙂
Looks heavenly! Two bowls for me, please! 😉
My thoughts are with you, your family, and Mason. It’s difficult to see our pets ailing.
That soup looks amazing and it is making me think of summer even with all of the snow! 🙂
Such a beautiful and healthy soup!
I just happened upon your post today, and my heart is broken for you, poor Mason, and your family. It’s hard to watch anyone you love suffer, no matter how many legs they have! Praying for that small miracle… ❤
Thank you so much Patti.
I”m so sorry to hear Mason. Hugs to you and your family.
ooo I’ve never had cream of zucchini soup before but this is definitely something i’d love to try. i love all creamy soups and zucchini is one of my fav root veggies!
My heart is also breaking for you 🙁 that is so sad about little Mason. I really do hope the best for him and your family. I’m thinking of you all! xoxo
Hi Heather,
My name is Margaret Mitacek. Like you, I am a graduate of Seattle Prep. I enjoy reading your blog, and am sad to learn about Mason. Over the summer, my dog 2 year old dog Oyster suffered a severe back injury due to a genetic spine malformation. Over the course of 12 hours she was experiencing full paralysis. Needless to say, it was a terrifying experience. Anyhow, she has made an amazing recovery. I attribute much of her success to the wonderful team at SVS (Seattle Veterinary Services) in Kirkland. Their neurosurgeon Dr. Sanders and Physical Therapy team were fantastic. I have included a link with a video/text of Oyster’s story on the SVS website. It might be worth having a consult with them if you haven’t already. Hope Oyster’s story gives you some hope. I certainly know how you and your family must be feeling right now. Best wishes.
Margaret

Heather, my heart goes out to you. Our animal companions are one of life’s greatest gifts, and we are so blessed when they grace us with their presence. No matter what happens, the love you and your family have for Mason will echo through all of eternity. 🙂
Thank you for all that you do and for the magnificent recipes you share with all of us. You are a treasure!
Hi Heather,
I have a friend who has a golden with a similar-sounding issue so I want to share in the chance that it may help. Her disease is called immune mediated polyarthritis and was treated with steroids at first and for several years. She’s now on daily rimadyl (anti-inflammatory). She only lost her hind legs but it can affect all limbs (hence the poly in name). it’s a knee tap that can help diagnose IMPA. There’s a certain cell that shows up if it could be it…but I don’t have the name to share. Hopefully there’s an orthopedic specialist that can help. Mason, you and your family are in my thoughts and heart.
