I know. There has been a lot of cheesy talk this week.
But I felt compelled to share this recipe with you since I mentioned it on Monday and had so many requests for it.
I can see why, I mean Blue Cheese Biscuits? Come on….. they are ridiculous.
One more reason to make a big old ham this weekend….
Preheat the oven to 450 degrees. Prepare a sheet pan with parchment or a silpat.
In the bowl of a food processor, combine the flour, salt and baking powder and pulse to combine. Add the butter and blue cheese and pulse to combine. Pour in the beer and pulse until you have a smooth dough.
Transfer the dough to the counter and with a little flour, roll out. Slice the biscuits and transfer to a baking sheet. Lightly brush with milk and sprinkle with a little kosher salt (I used merlot salt).
Bake the biscuits for 8-10 minutes, and serve immediately.

- -4 ounces crumbled blue cheese
- -¾ cup beer (I used pacifico)

You know, I was waiting for this recipe when you mentioned it earlier in the week. We were going to make cream cheese biscuits for Easter, but these sound soooo much better. My 17 yr. old son will be assigned to making these on Easter. He wants to go to culinary school, so I have him working on leavened doughs right now. I’m sure these biscuits will be a hit!
Good for your son!! You should bring him to the book signing and I will tell him everything I know! He will love these Kelley, because they are so easy and they will be a huge hit. He should also take a look at the Guinness Cheddar Biscuits I posted a few weeks ago. The beer takes over for the yeast and puffs this dough up nicely! Worked out perfectly! We’re beginners at this and yet it came out great. We didn’t know how thick to slice them so we tried different ones. The thin ones came out on the crunchy side, the thicker ones on the fluffy side, but both kinds were great.
