I hope you all had a wonderful weekend, tucked safely away with your families after last weeks terrors and sadness. I spent a ton of time with friends and family and was grateful for every moment.
And as a gift for you today, I have Chocolate Peanut Butter Granola. I have had this granola recipe in my back pocket for a couple weeks now. I don’t know what has been the delay in publishing it since it was so freaking good? (My mom, the girls and I had a real delight gobbling this up one day.) But then when I remembered that I promised you a whopper of a recipe for Monday, it is the first that came to mind.
When I say Granola, lets not get confused. This is not a “healthy breakfast” item. This is like a crazy indulgent freaking delicious anytime treat that I would say is in the breakfast department like, lets say, a donut would be?
I enjoyed several bowls with cold milk and fresh banana slices.
Several.
And those were magnificent..
But then realized that I could also sprinkle it over ice cream.
And that was nothing to turn my nose up at either. Let me tell you.
I was also thinking that this would be an awesome gift. You know, like packaged up in a big latch top jar with a bow?
Either way, PHENOMENOL!!!! Please try this.
To make this Chocolate Peanut Butter Granola, this is what you do:
Preheat the oven to 275 degrees. On a sheet pan, spread out the pats and the peanuts.
In a saucepan, combine the coconut oil, peanut butter, cocoa powder, sugar and vanilla. Heat together over low heat while stirring until you have a smooth even chocolate sauce.
Pour the chocolate sauce over the oats and nuts and using a spatula, gently stir the oats and nuts until they are evenly coated.
Bake the granola for 45 minutes at 275 degrees until crispy.
Store in an airtight container.

- -1 cup unsweetened shredded coconut

Hey Heather! This looks great and I’m going to make it for a bake sale at the public library. Just one question: Do you put the coconut in with the peanuts, or after you take it out of the oven?
Just to put a little healthier spin, I used almonds instead of peanuts and almond butter (same consistency as peanut butter but healthier) and it was absolutely fantastic!!! Thanks you
