First of all, all day Thursday I kept thinking it was Friday. Like I was legitimately foggy over the matter several times! Does that ever happen to you? I think it’s just called wishful thinking. When I finally accepted that it was indeed Thursday, I took a poll on Facebook and twitter about what to post today. This kale salad narrowly won out to the Salted Chocolate Caramel Stuffed Chocolate Chip Cookies. Isn’t that kind of funny!? It seemed funny to me!
It is like the typical war that wages in my mind and belly. Kale or cookies. I will be honest. Cookies usually win out for me. I have not historically been the biggest Kale lover, but I have found that raw curly kale has really grown on me.
And in a fresh salad tossed with zesty dressing, I actually might, uh, even kind of love it. Eek!
I have also been letting loose little quips about how INSANE my sweet tooth has been lately. Typically, I have total control over it. Like I just like a couple bites and then I can leave it alone. But the last few weeks? Forgettaboutit. I want everything. And CHOCOLATE!!??? I always say, I like chocolate, but I don’t love it. But you would never know it lately. Anyways, I guess my point is that thank goodness I am evening out some of that with beautiful summer salads like this kale, charred corn and feta variety.
The salad is fresh and I love the addition of the sweet corn and cherry tomatoes and the salty feta- plus the colors are gorgeous, no? It’s also great served along side grilled meats or Salmon if you are busy BBQing this weekend. Enjoy!!
Recipe: Kale, Charred Corn and Feta Salad
Ingredients
- -8 cups curly Kale, torn into bite sized pieces
- -2 ears grilled corn on the cob
- -2 ounces Feta cheese crumbled
- -1 cup cherry tomatoes, sliced in half
- Vinaigrette
- -1 shallot minced
- -1 tablespoon Dijon mustard
- -2 teaspoons honey (or agave)
- -3 tablespoons olive oil
- -3 tablespoons red wine vinegar
- -Kosher salt and black pepper
Instructions
- Slice the corn off of the cob, reserving the kernels and discarding the cob.
- 1. In a large bowl combine the kale, charred corn and cherry tomatoes.
- 2. In a small bowl, combine the shallot, mustard, oil and vinegar. Whisk together and season to taste with salt and pepper.
- 3. Toss the salad with the dressing until it is well combined. Sprinkle the feta over the top and add a few cracks of fresh black pepper.

kale is everywhere these days! I’ve been wanting to try it in a salad but couldn’t quite make myself believe it would be tasty. This looks and sounds delish. Plus Trader Joe’s has all the ingredients! I find being overwhelmed always leads to the sweet tooth kicking into high gear. With all the traveling you’ve done and now school is out, it’s no wonder. Chocolate is the great antidote! My husband has some serious health stuff going on and mother in law with Alzheimer’s and brother in law who refuses to believe it so Ferrero Rocher chocolate is my stand by lately. Or Lindt salted dark chocolate.
Oh Vicki. I’m so sorry. Ferrero Rocher feels totally fair. I hope very much that your husband will turn a corner. I am deeply sympathetic about your mother-in-law. I watched my grandmother struggle with it for many, many years, and there is little as difficult. *hugs*
