I could probably eat pizza every single night of my life. There are like a million possibilities and ingenious ways to re-invent and re-create the platform of your basic pizza. I turn to the seasons, my spontaneous cravings and every last fantastical whim of a notion I have for my inspiration.
This time it happens to be creamy blue veined cheese, sweet ripe cherry tomatoes, roasted garlic and my favorite, balsamic vinegar! Not only gorgeous, but so intense in flavors and textures. I mean, I have so many cherry tomatoes around, I don’t even know what to do with them. Suggestions Please!! Maybe I will just keep making this pizza…
Do you think it is ok to consider this a one-pot meal!? I mean, there is some protein and some vegetables involved, right? I guess that you could add a nice kale salad to round things out…

Artichoke Pizza with Leeks and Prosciutto
Beet, Arugula and Goat Cheese Pizza
Potato, Brussels Sprouts and Goat Cheese Pizza
To make this Pizza, this is what you do:
Preheat the crust to 400 degrees. Wrap a whole head of garlic with 1 tablespoon olive oil and salt in a sheet of foil and put in the oven. Cook for 20 minutes until the garlic is soft.
Drizzle olive oil on a sheet pan. Roll out the dough into a thin round. Transfer the dough to the sheet pan and fold the edges over into a crust.
Spread Olive oil over the top of the crust and sprinkle with salt and bake until pale golden, about 8-10 minutes.
Pull the golden crust out and drizzle a generous amount of balsamic glaze over the bottom of the pizza.
Add the cheese, cherry tomatoes and squeeze the roasted garlic from the bulb onto the crust.
Drizzle with olive oil and put the pizza in the oven to bake for another 6-8 minutes.
Pull the pizza out, slice and serve hot!

Great minds think alike! I posted a pizza today too. I cannot get enough of it. I’ve never tried a blue cheese on a pizza before, maybe that should be next! And a suggestion for the cherry tomatoes…slow roast them and use them in EVERYTHING. 🙂
