Happy Thirsty Thursday! It is freaking hot in Seattle. I mean, I am not complaining. This is for sure the nicest summer I can ever, ever remember having in Seattle, maybe in my entire life.
But there are some things that go along with the heat that are unavoidable. Like obsessive plant watering (twice a day right now) which leads to accidentally stepping barefoot on slugs during the night time watering.
Super sized, extra ripe fruit and tomatoes come with all this heat. Also, super sized air conditioning bills.
And of course, the fact that you need lots of cold drinks to keep the heat at bay. Like this Frozen Coconut Banana Daiquiri’s. We drank a boat load of these frosty confections, and they did the trick. See for yourself…
Recipe: Frozen Coconut Banana Daiquiri’s
Ingredients
- 1 banana
- ½ cup coconut milk
- 4 ounces rum
- 2 tablespoons orange juice
- 2/3 cup ice cubes
Instructions
- Combine everything in the jar of a blender and puree until smooth. Pour into chilled glasses.
- *To make the coconut rim, rub the rim of the glass with a fresh lime wedge and then dip it into some unsweetened shredded coconut.

Oooh, you know what this needs? Homemade banana liqueur. Seriously easy, and oh-so-good. I made a set of banana liqueur, cherry heering, allspice dram, and bought a bunch of great rum for a tiki party this summer and made frozen banana daiquiris with it, yum.
I keep hearing from my friends and family in Vancouver that they didn’t have a drop of rain in July which, as you know, is virtually unheard of. All the more reason to make plenty of these gorgeous daiquiris to keep you cool.

These look so amazing! Love love love coconut. We’re having cool weather in northern California and thoroughly enjoying it. The Napa grape harvest is said to be one of the best in years due to the crazy summer weather.

Hey, we’re supposed to be getting all the heat here in the Northeast this time of year! It’s been mid 70’s – 80 here – really beautiful weather but not at all what we usually experience in August. Crazy!
