For anyone who got a chance to tune in Tuesday morning for my New Day Northwest Halloween Segment, If you want to watch all of the fun, click HERE.
One of the desserts I featured was this fun and spooky twist on the classic children’s treat “dirt cake.” Remember those? Oreo crumbs crumbled over chocolate and cool whip and filled with gummy worms? If they are fancy then they are served in Terra Cotta pots? I loved those dirt cakes…
Well these are slightly dressed up by using a chocolate mousse, but they still have the same wonderful chocolate dirt crumbs and hiding in the mousse are creepy crawly gummy worms and chocolate beetles (or, um, raisinettes!)
What a wonderful surprise for the kids! Mine had a blast digging around in the mousse and a friend of theirs was busy for ages finding all of the gummy worms! Perfect for Halloween with the little sugar tombstones, or at any other time just for fun. And while I made this in individual servings, I made a second batch in a huge trifle dish and that was super fun too. Enjoy!
To make this Dirt Cake, this is what you do:
In the bowl of a standing mixer, whip together the yolks and the sugar until fluffy.
Meanwhile melt the dark chocolate in the microwave and heat the cream to a simmer over medium heat.
Add the chocolate to the eggs and sugar and whip until well incorporated. It will start to seize up a bit. Add the hot cream and whip until smooth. Set aside.
Whip the 3 cups heavy cream to soft peaks.
Spoon 1/3 of the whipped cream into the chocolate base. Whisk until smooth.
Gently fold in the rest of the whipped cream until it is well incorporated. Set in the refrigerator until ready to use.
Put the oreo cookies (without the cream center) in the bowl of a food processor and pulse on high until you have a fine crumb.
Get out your 8 large glasses and spoon some of the oreo dirt into the bottom of the glasses. Next comes a gummy worm and some raisinets.
Pile in some of the chocolate cream. Then some of the raisinets and another worm.
Cover the top with a dollop of mousse and then cover the top inch with the chocolate dirt. Refrigerate until ready to serve.
