Ok. This is a food blog, so I won’t go into any graphic details, but there has been a nasty bug in our house. The stomach flu is going around at my girl’s school, and Pia has fallen as the first casualty in our family. Mmmm. Good times, right? Please cross your fingers that it doesn’t rip through the rest of us!
But on the bright side, at least it is not in the middle of Thanksgiving break, right? Now that would be a bummer.
On a much, much brighter note, she is on the mend and today was craving this very fast and easy “on the fly chicken and rice soup.” I thought it would be nice to make biscuits for the rest of the family too. Between the blustery weather, the sick vibe and the lonely bowl of soup, biscuits were seriously in order.
But these were not part of my usual rotation of buttermilk, beer or cheesy biscuits. These were something new that I made. They were a welcome sight on our dinner table, but they were also made with Thanksgiving in mind.
There is something special and wonderful about yeast rolls, but if you don’t have the time for those, then biscuits like these are a wonderful and equally delicious option.
The sweet potato and green onion is wonderful together and thanks to that vegetable puree and a healthy amount of buttermilk, these biscuits could not be more tender and perfect. If you don’t make them for Thanksgiving dinner, at least let them grace your table with a hot bowl of soup to special up a weeknight dinner.
To make these Sweet Potato and Green Onion Biscuits, this is what you do:
Preheat the oven to 400 degrees and prepare a sheet pan with a silpat or parchment. In a large bowl, combine the dry ingredients and the green onions.
Using a pastry cutter or two forks, cut the butter into the dry ingredients until well combined (but there will still be small bits of butter visible).
In a smaller bowl, combine the egg, buttermilk and sweet potato puree. Pour the sweet potato mixture into the big bowl.
Gently mix together the contents until everything comes together as a sticky dough.
Turn the dough out onto a lightly floured surface and gently shape the dough into a disc, about ¾” thick. Cut out biscuits with a biscuit cutter or juice glass. Place the biscuits onto a sheet pan and gently rub a little milk on top of each biscuit.
Bake the biscuits at 400 degrees for 12 minutes. Serve hot or at room temperature.
Recipe: Sweet Potato and Green Onion Biscuits

- -1 Tbs sugar
- -1 tsp salt
- -4 Tbs fresh green onion, thinly sliced

- -1 Tbs milk for brushing the tops of the biscuits

You mention to preheat the oven to 350 F yet you bake them at 400 F. What is the purpose of pre-heating for 350? Couldn’t you just preheat to 400F? Also you mention to mix the dry ingredients and sage (instruction #2) Yet sage is not listed on your ingredients. Did you add sage and if so how much? Is this a typo and you meant to say green onions?

Is it possible to make the dough 24-48 hours ahead?
I have not tried that Jennifer. If you do, I guess I would put it in the fridge and then let it come to room temperature and then bake!
