In case you were wondering, Banana anything and I am completely in. I am obsessed. Examples can be found Here, Here, Here and Here. Probably Banana Bread being my biggest weakness.
Then enter my kids- who by the way feel the same way about pancakes as I feel about banana bread. And while I love pancakes as much as the next carb obsessed girl, I am always trying to push them into switching things up! (I am sure you can guess how well that goes over). Peach and Coconut, PB&J, swedish style, blueberries, pumpkin, FIGS, I am a pusher of the highest order.
So they were double time rolling their eye’s at me over these Banana Walnut Pancakes (obviously inspired by banana bread). But guess what? They gobbled these down like pancakes were going out of style. Coco did pause and say “what are these little hard things in the pancakes?” I said “walnuts, you like them remember?” and then braced myself for the rejection. But it never came- she just went on eating them. I even made a gluten/dairy/egg free version for Pia ( she will share it on her blog soon) and those were a hit too!
With the temperatures so far below freezing, a hot weekend breakfast seems like the right thing. Saturday we have snow forecasted, (I have explained Seattle and Snow before, but it is a big deal/disaster zone every time) so I am stocking up on hibernating supplies and bananas and maple syrup are at the top of my list!
Recipe: Banana Walnut Pancakes
makes 12 large pancakes
Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 egg, beaten
- 1 ¼ cups buttermilk
- 1 ripe banana, mashed
- 2 tablespoons melted butter
- ½ cup walnut pieces
- vegetable oil for frying
Instructions
- In a medium bowl combine all of the dry ingredients.
- Add the egg, buttermilk, banana and melted butter. Whisk them hard until it is completely combined well. Fold in the walnut pieces.
- In a large heavy skillet over medium high heat, heat a thin layer of vegetable oil.
- When the oil is hot, add the batter to the pan and cook 3-4 pancakes at a time, flipping them when they are golden brown on the edges and little bubbles form on the batter.
- Stack them and eat them hot with butter, syrup and freshly sliced bananas.

What a great idea! I think I will make these for my mom the next time I am visiting her; she always has walnuts and bananas around. I love this buttermilk pancake batter, too — very simple, as it should be. We have a recipe for buttermilk pancakes that is almost the same basic batter, that my great-great-grandmother, Malinda Groshong, used when she came out on the Oregon Trail. Can you imagine? I have to assume she cooked them in a frying pan over a fire. This woman helped raise my grandmother, and taught her how to churn butter and bake bread, and then my grandmother taught my mother, my sister, and me how to bake bread. (My mom churned butter in the 1940s, but my sister and I never did.)
Terry- this is completely amazing. I bet she did cool them that way- which really wasn’t too different from how I cooked them! I bet you have the best bread recipes!
I love banana pancakes and walnuts sound like a great addition! If I were your girls I would have gobbled them down too! Great for a cold weekend morning when all you want is some hot carby breakfast!
that’s what I was thinking! It is just so, so cold here and all I could think about was having hot breakfast ready for the family this weekend with the snow moving in!

I am with you. Banana anything. These pancakes look terrific.
I just made these with a gluten free “1 to 1” baking flour (I used Bob’s Red Mill), a touch of buckwheat flour and skim milk. Even without the walnuts they were delicious! And with plenty of bananas on top a mere drizzle of syrup was plenty. Thank you for a very satisfying meal.
