Pete, Pia and I are in the midst of a “Naked and Afraid” bender. Have you watched this show!? My God it is absolutely CRAZY. I get weak in the knees with every crazy thing that happens on that show. I wouldn’t last 10 minutes in one of those situations- especially in the Amazon with all those mosquitos. Mosquitos are my kryptonite. Anyways, I am a nervous eater, and am chowing my way through the mini bar in anticipation of what’s happening on the show. But really what I want are Almond Joy Cookie Bars.
The combination of Almonds, Coconut and Chocolate (otherwise known as “Almond Joy”) is one of my favorites. I used to specifically seek out the Almond Joy Bars on Halloween while my brothers and all my friends rejected them and traded me for m&m’s. While I still have a soft spot for those cheap candy bars, I also love the more grown up versions of the flavor combo and I have used them together in cookies and scones. So good.
But here we have kind of like amped up blondies packed with coconut and studded with crunchy almonds and creamy dark chocolate chips. The coconut makes it so moist and then every bite of these cookie bars is just packed with goodness.
In fact, I am totally drooling over these right now and wishing I had a whole batch here in my hotel room. I guess I will have to settle for the mini bar gummy bears- but you don’t have to! Hustle into your kitchen and in 45 minutes from now, you could be in Almond Joy Cookie Bar Heaven.
Recipe: Almond Joy Cookie Bars
makes 24 small bars
Ingredients
- 1 cup butter
- 1 ½ cups sugar
- 3 eggs
- 1 teaspoon vanilla
- 14 ounce bag sweetened shredded coconut
- 2 ½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 8 ounces slivered almonds
- 10 ounces chocolate chips
Instructions
- Preheat the oven to 350 degres and line a ¼ sheet pan with tin foil and then spray it with baking spray.
- In the bowl of a standing mixer, cream together the butter and sugar until fluffy.
- Add the vanilla and the eggs and whip together until very fluffy.
- Add the coconut and combine well.
- In a separate bowl combine the flour, baking soda and salt and then add it to the cookie batter.
- Gently mix in the almonds and the chocolate chips.
- Transfer the dough into the prepared sheet pan and smooth evenly into the pan.
- Bake the cookie bars for 30 minutes and then let them cool completely before slicing.

Jason and I were actually wondering who actually watches Naked & Afraid. I don’t know anyone that does but now I can say I know someone! It looks intriguing but I’m sure I’d get the heeby-jeebies watching it. I don’t think I’d survive with all the bugs and everything, haha – now these almond joy cookie bars…I can get behind them!!
You are speaking my language–coconut is one of my top 3 flavors!! These look crazy good and I’m also a HUGE Almond Joy fan — so, naturally, I’m making these. 🙂
So funny about “Naked and Afraid” – that’s exactly what I was worried about, too – not the lack of food or clean water or footwear – I was like, “holy cow, how can they stand the mosquitoes?” They’d have to put me in a mental institution after about 4 hours of that.

Oooooh! Have you ever baked with almond flour or coconut flour? I bet either of those would be tasty alternatives to the regular flour here! It might just take some experimenting to get the right amount. My husband is on a super strict diet so I’m obsessively trying to modify everything tasty. 😉
Sharon- what kind of a strict diet is your husband on? (I am always fascinated because of the typical allergy diet that we tend to eat on for my daughters allergies…)
He can have absolutely no grain, with the exception of quinoa and green wheat. No rice either. The diet was prescribed to reverse diabetes and high cholesterol, and it HAS! He is absolutely in the best health of his life, but after a while, the cravings for treats, pizza, pasta, and bread started to pop up. I’ve been experimenting with some paleo recipes and some traditional recipes and just substituting different kinds of flours for the regular flour. We have pizza under control now, and brownies, and cake, but bread is the holy grail, lol! Trader Joe’s has quinoa pasta, too, so that helped a ton, especially for quick meals.
Coconut, almond & chocolate is always a favorite!!

Closet Cooking retweeted this recipe and I made it yesterday and it was amazing! I had some coconut that needed to be used… honestly it was a little dry lol. But the batter perked it right up and the coconut was super moist in the bars. I used a glass 9×13 pyrex with foil but because they were thicker, cooked them for 40 minutes. I baked them in a 9x13pan. I think they would work great baked in a jelly roll pan – maybe that is what it is supposed to be, I was confused by the 1/4 sheet. Can’t wait to try them again!
jelly roll is a quarter sheet pan June- I will be sure to clarify in the instructions. I hope you like them!!

Another June commenting–1/4 sheet pan and a jelly roll pan are not the same size. 1/4 sheet is 9×13 and 1/2 sheet is 13×18. A jelly roll pan is 10 1/2 x 15 1/2–which would make the bars only somewhat thinner ! In fact, spread out the calories a little 🙂
