If you or your kids aren’t into the flavor of coconut milk, then try vanilla almond milk (or is you are cool with milk, then go with whole milk)- but the coconut milk really does provide a really nice creaminess and richness that I love.
The berries make everything fruity and gorgeous!! I have a million idea for different color combinations now that I have done this once! I will have to invest in some more molds I think…
I am also loving this option for Summer desserts for the kids. Outside of the fact that I am happy they can have it as a dairy free alternative to ice cream, I love that it doesn’t have any processed cane sugar, so even Pia can have a popsicle.
As an adult, I have been known to chow one (or two) down on a hot afternoon out in the garden. They are just good to me! Uh, and they are kind of healthy, right…!?
Recipe: Berry Coconut Pops
Ingredients
- 1 cup blackberries
- 1 cup raspberries
- 2 cups canned unsweetened coconut milk
- ¼ cup agave
- pinch of salt
- 2 teaspoons vanilla
Instructions
- In the jar of a blender, puree everything in high until smooth. Pour into popsicle molds and freeze with a popsicle stick at least 4 hours or up to over night.
- Run hot water over the popsicle mold and then pull them out. Enjoy immediately.

Even though we are not allergic to milk, I would still opt for the coconut milk in this. It makes Popsicles and sorbet nice and creamy.
