This is just crazy delicious comfort food that also happens to be AMAZINGLY delicious and light on the tummy!! (isn’t that a great combo?)
I do fry them to crispy, but they are wrapped in cool lettuce leaves and garnished with fresh herbs and veggies. Plus there is a delicious sweet chili dipping sauce sweetened with agave that is just spicy enough to add some depth to the bright lemony and ginger flavor of the meatballs.
I meant these to be a great option for appetizers- like a little light Asian taco, but the truth is, we ate the whole batch as lunch, and then another batch as dinner. Oink, oink.

Recipe: Lemongrass Pork Meatball Lettuce Cups with Sweet Chili Dipping Sauce
Ingredients
- 1/2 pound ground pork
- 2 tablespoons fresh ginger, minced
- 2 tablespoons fresh lemongrass, minced
- 2 tablespoons fresh cilantro, minced
- 2 green onions, minced
- 2 tablespoons rice wine vinegar
- 1 tablespoons gluten free soy sauce
- vegetable oil for frying
- Sweet Chili Dipping Sauce
- 1 tablespoon agave
- 2 teaspoons sambal (garlic-chili sauce)
- 2 teaspoons sesame oil
- 2 tablespoons rice wine vinegar
- 4 lettuce leaves
- 1 carrot, thinly sliced and julienned
Instructions
- In a medium bowl, combine the pork, ginger, lemongrass, cilantro, green onions, rice wine vinegar and soy sauce.
- Form 12 meatballs and set aside.
- In a large heavy pan, heat a thin layer of vegetable oil. Fry the meatballs until they are browned on all sides and cooked through, 3-4 minutes.
- While the meatballs are cooking through, whisk the agave, sambal, sesame oil and rice wine vinegar in a small bowl.
- Put the hot meatballs in the lettuce cups and add the carrots. Serve immediately with the Sweet Chili Dipping Sauce.
