We are in the middle of some major storms in Seattle right now. Like there was a TORNADO!! By the way- we don’t have tornadoes here. It is Bizarre. And super rainy and gray and awful here- but it is perfect weather for hunkering down in the kitchen, which I have been doing for days.

I realized that I have been on such an insane pumpkin bender these past few weeks, that I have been leaving out one of my old loves: butternut squash. Well, in the interest of fairness, I had to give the squash a starring roll in my Friday Recipe.

And what better way to star, than as a stand in for potatoes in deep fried French Fries!?

Butternut Squash Fries with Harissa Honey Ketchup

I got a little carried away with deep fat frying the other day, and so my squash went right in the oil!!

Now, they don’t have the same starch content as potatoes, so they won’t come up quite as crispy- but if you make sure that you slice the fries thinly, then they can get nice and crispy when they come out of the fryer.

I like to salt mine and then dip them in this delicious blend of Ketchup, honey and harissa (a spicy north African chili paste). The whole combo is delicious and an unusual way to enjoy delicious butternut squash.

Recipe: Butternut Squash French fries with Harissa Honey Ketchup

Ingredients

  • 1 quart vegetable oil for frying
  • 1 butternut squash, peeled and seeded
  • kosher salt
  • ¼ cup ketchup
  • 1 teaspoon harissa
  • 1 teaspoon honey

Instructions

  1. In a large heavy pot, bring the vegetable oil up to 375 degrees.
  2. Meanwhile, cut the squash into long strips. (Cut them more thinly than I did in the pictures to get them more crispy!)
  3. Cook the fries in batches until they are golden brown and crisp, making sure that you keep the oil hot (remember not to put too many fries in the oil at one time!)
  4. As soon as each batch comes out of the hot oil, drain them on a paper towel and sprinkle them with kosher salt.
  5. While fries are cooking, mix the ketchup, harissa and honey together and put in a serving bowl.
  6. Serve hot with the Harissa Honey Ketchup.
