These tacos are pretty much the best thing you have ever had. And that is what made them so fitting for this special occasion.
Myself and many food friends are busy celebrating our lovely friend Jessica’s Baby Shower today. Only we live all over the place, so it is really like a virtual baby shower. But that does not take away from the warm wishes and loving intent to celebrate a new little baby coming into the world!
By the way, she has not found about the sex of the baby. Did you guys find out? Or wait for the surprise?
I was way too impatient. And as I always say, it’s a surprise no matter what!
Plus I was wrong in my guessing both times. I kept thinking it would be a boy and I wound up with girls…
Anyways, I am very excited for Jessica who has been out promoting her new book while being 8 months pregnant. (Anyone who has been pregnant knows what that must be taking right now. Dedication.) And she is in such great spirits (and great shape!) and we just really wanted her to know that we are all thinking about her and with her in spirit!!
Speaking of spirit, these Banh Mi Tacos created in the spirit of Jessica’s over the top culinary style. Well, mixed with my taco obsession.
These are so insanely delicious I just can’t get over it! I totally ripe doff all of the incredible flavors of a Vietnamese Banh Mi Sandwich and turned them into a taco. A blessed, perfect taco. Warm Corn tortillas are piled high with spicy Asian flavored pulled pork and then topped with the freshest cilantro, thinly sliced cucumbers and carrots ands sweet and picy pickled red onions. Then a little drizzle of spicy sriracha honey sauce and fresh lime juice finishes them off right before I shove ten in my mouth.

In a large heavy pot over high heat, add the vegetable oil. Sear the pork shoulder on all sides until browned. Add the onions, garlic and jalapeno slices. Then add the soy sauce, vinegar, sugar and stock and reduce the heat to low and put a lid on the pot.
Simmer the pork for 3-4 hours, flipping the pork half way through. Cook until the pork is completely tender and falling apart. Pull the shoulder out of the pot with tongs and carefully (it’s hot!!) pull apart the meat with a fork. Set aside the meat and discard of the fat, grizzle and bone. Add the shredded meat back to the pot (with the remaining broth, onions and jalapeno’s.) Cook over medium heat until some of the remaining liquid has cooked down and you have a very moist pulled pork. While the pork is cooking, make the onions and the sauce. For the spicy sauce, whisk together the sriracha, soy, honey and vinegar until well combined. Set aside.
Prepare all of the toppings.
When the pork is ready, heat up the tortillas (I like to do so in a dry non-stick pan for about 20 seconds on each side) and pile with the pork and fresh cilantro and sweet and spicy red onions.
Then add the fresh cucumbers and red chili’s.
And then add the carrots and drizzle with the spicy sauce and a squeeze of fresh lime juice. Enjoy immediately!
Recipe: Banh Mi Tacos with Spicy Sriracha Honey Sauce
Ingredients
- Pulled Pork:
- 2 tablespoons vegetable oil
- 4 pound Pork Shoulder
- 2 yellow onions, quartered
- 4 garlic cloves
- 2 jalapenos sliced
- ¼ cup gluten free soy sauce
- ½ cup rice wine vinegar
- ¼ cup sugar (we used beet sugar)
- 4 cups chicken stock
- Spicy Sriracha Honey Sauce:
- 2 tablespoons sriracha
- 1 tablespoon soy sauce
- 2 tablespoons honey
- 1 tablespoon rice wine vinegar
- Corn Tortillas
- Sweet and Spicy Red Onions
- Fresh cilantro
- Carrots, sliced into matchsticks
- Cucumbers, sliced into matchsticks
- Fresh red chili’s, thinly sliced

Yeah, we totally had to find out as well on the gender. Too bad both times they told us we were having boys and they turned out as girls. Which we are glad of! We love our girls. And my wife keeps telling me these girls are going to keep me out of the nursing homes one day. Love these taco’s, we tried something similar to these from a food truck the other day, but these look so much better.
