Still in New York and still freezing. Also, I managed to pick up a cold- gross. Could I get sick more often this winter?! It is like the worst ever. So between the cold and the cold (get it ?!) I want a Thirsty Thursday “cure all”. A drink/medicine (like these Hot Toddy’s) is always a great option. This week it’s booze doused Horchata.
Well, at least this is my weirdo version of Horchata. Super creamy and rich with both almond and coconut milk and flavored with vanilla and cinnamon. This is just begging to be guzzled with rum, don’t you think?
I love how this rice based drink can be served chilled over ice or warmed up like a creamy frothy (delicious) substitute for eggnog (which makes me gag- so this is a much better choice and DAIRY FREE!!!). With the chill around here right now, I am going the hot route with a liberal glug of rum or even bourbon to warm me up. Happy Thirsty Thursday!
Recipe: Hot Rum Horchata
Ingredients
- 1 cup long grain rice
- 2 cups water
- 2 cups unsweetened coconut milk
- 2 cups unsweetened almond milk
- ½ cup sugar
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- Rum as desired (I recommend 1 1/2 ounces per 1 cup of horchata mixture)
Instructions
- Soak the rice in the water for 1 hour. Add the rice mixture to a blender with the almond milk. Puree on high and then strain through a fine mesh sieve.
- Rinse the blender and add the coconut milk, sugar, vanilla and cinnamon. Puree on high and then add to the strained rice/almond milk mixture.
- Serve the horchata with a shot of rum over ice if desired.
