We are having absolutely gorgeous weather here in Seattle. Like it is light until 9pm and I was out dead heading the roses and pansies until 8. I just can’t get enough of being out in the garden!
Today (Thirsty-Thursday!) we are supposed to have 77 degree weather. That is truly about as nice as it gets here. The perfect temperature during the day and extra warm evenings. And lets be honest, extra warm evenings call for a lot more fun than dead-heading your plants while making sure you don’t step in your dogs you-know-what that he left as a surprise in your perennial garden. They call for cocktails.
Like this extra perfect Watermelon Vodka Limeade. It is actually the cousin of Strawberry Vodka Lemonade. The younger, cooler, edgier cousin.
This is also perfect for any weekend gatherings you may be having this weekend. If you wanted to increase it for a crowd you can easily double or triple the recipe. You could also add club soda for a little effervescence that would be a nice touch! Just serve it in a big pitcher filled with ice. Happy Drinking!!!
Recipe: Watermelon Vodka Limeade
Ingredients
- 1 cup fresh seedless watermelon, cubed
- 1 cup sugar (we used beet sugar)
- 1 cup water
- 1 cup freshly squeezed lime juice
- 1 cup water
- 8 ounces vodka
- mint and lime slices for garnish
- ice cubes
Instructions
- In a small saucepan, combine the sugar and water and bring to a simmer until the sugar is dissolved.
- Throw into the jar of a blender with the watermelon and puree until smooth. Strain through a fine mesh sieve into a pitcher.
- Add the lime juice, water and the vodka to the watermelon simple syrup and stir well.
- Fill the glasses completely with ice cubes and add some mint if desired and lime slices. Pour the cocktails over the ice and serve immediately.
