Yogurt, with Granola, Blueberries and Honey 1

This is crispy and slightly sweet and lends a wonderful crunch to yogurt and fruit. This granola recipe is also packed with good fats, fiber, protein and tons of vitamins and minerals such as potassium and calcium. You can also feel free to add different ingredients that you like, such as substituting different nuts or other dried fruits that you may like.

Granola
1/2 cup brown sugar
1/2 tsp salt
2 tsp cinnamon
1 cup honey
1 cup vegetable oil
2 tsp vanilla extract
8 cups rolled oats
2 cups wheat bran
1 cup sunflower seeds
2 cups almonds
1 cup walnuts
1 cup shredded flaked coconut
1 cup raisins

Preheat the oven to 325 degrees. Prepare two large sheet pans by lining them with parchment paper.

Combine the sugar, salt, cinnamon, honey, oil and vanilla in a medium saucepan. Cook this over medium heat, stirring to combine, until boiling. While you are heating the mixture to a boil, combine the oats, bran, seeds and nuts and coconut in a large mixing bowl.

When the honey mixture has boiled, remove it from the heat and pour it over the dry ingredients. Mix everything together until all of the dry ingredients are coated. Then evenly split the granola between the two sheet pans, and spread it out thinly over the parchment paper.

Bake the granola until golden and crispy, about 20 minutes. Half way through baking, you should shake the pan around to make sure the granola is toasting evenly. Let the granola sit out and cool, and then stir in the raisins. The granola should be stored in an airtight container.

(This makes enough for about 12 servings, so there will be extra. But the granola stores well in an airtight container for up to 3 months.)
