These are delicious and crispy and salty, and can also be used in place of bacon in sandwiches or as garnish in salads.

Purchase the pancetta that is rolled and sliced, so that the meat comes as a round.

Preheat oven to 400 degrees. Prepare a sheet pan with a piece of parchment paper.

Carefully separate the rounds from each other, and lay them flat on the parchment paper. Put them in the oven and bake them until they are browned and crispy, about 10-15 minutes. Remove them from the parchment paper (and grease) and serve them hot or room temperature.
