Banana Walnut Muffins
I got an email from an old friend the other day saying that she had a bunch of ripe bananas and what should she make? Standard banana bread was out, she wanted something al ittle bit different. Funny enough, I had been thinking about making banana muffins for a while. The girls are typically not so great at eating breakfast- but shove a fresh muffin their way, and they will gobble it up. So making a delicious and fast muffin recipe is an easy way to get them to eat their breakfast!
Banana Walnut Muffins
½ cup butter, soft
1 cup sugar
2 eggs
2 tsp Vanilla extract
1 ½ cups AP flour
½ cup bread flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
3 medium bananas, very ripe
1 cup walnut pieces
Preheat the oven to 400 degrees. Prepare a muffin pan with baking spray.
In a mixer, combine the butter and sugar until fluffy.
Add the eggs and vanilla and beat until fluffy.
In a separate bowl, combine the dry ingredients, including the walnuts.
Add the dry ingredients and the walnuts to the mixing bowl, and partially combine.
Add three very ripe bananas and beat on high until the bananas and the rest of the ingredients have been well combined into a smooth batter.
Evenly scoop the muffin batter into the tin.
Bake for 15 minutes at 400 degrees.

Great idea! I have a freezer full of ripe bananas and the idea of making bread hasn’t been appealing. But muffins? Perfect!
