My parents have lived in the same house since I was born, and the neighbors, Susie and Toshi, have been there almost as long. They are the greatest people and are really like family. They also happen to be unbelievable cook’s! Since we are living at my parents house as ours is being finished, I have had the good fortune of seeing them often. As I sat sweating away this afternoon, Toshi came over and asked if he could bring dinner over for us tonight so that I wouldn’t have to cook. What a guy! Obviously I was so excited, I got out of cooking in this sweltering heat, and his food is amazing.
Toshi did not disappoint with grilled rice cakes, radish salad and a fantastic, tender BBQ salmon that he slathered in an Asian marinade.
I am attempting to recreate the salmon dish here- I hope I do his recipe justice!
4 center cut filets of salmon, about 6 oz each
Marinade
-2 Tbs olive oil
-1 Tbs finely minced ginger
-2 Tbs finely minced garlic
-¼ cup rice wine vinegar
-3 Tbs soy sauce
-½ cup finely minced cilantro
-1-2 Tbs chili sauce (depending how hot you like it)
-3 Tbs brown sugar
-½ lime juiced
1) Preheat the BBQ to medium.
2) Place the filets on a sheet of foil and gently spoon some of the marinade over them.
3) Put the sheet of foil with salmon on the grill and let the salmon cook until just barely cooked through, about 5-7 minutes.
4) Spoon the rest of the sauce onto the filets and serve.
(This is wonderful with steamed white sticky rice).
