Roasted Flank Steak and Mango’s with Peanut Butter, Ginger and Chili-Sesame Sauce
This was a recipe from a dinner we had this week. It was really the “magic” sauce that made all three elements of the dinner delicious and come together. There was this great: 1)Flank Steak and Mango’s 2)Whole wheat spaghetti, sliced red peppers, green onions and carrot shavings 3) Baby Bok Choy and Shitake mushrooms.
The Flank steak and the mango’s are a fantastic combination. The spiciness, salty sweetness of the marinated steak was wonderful with the mellow sweet flavor and texture of the mango’s. Enjoy!
Roasted Flank Steak and Mango’s with Peanut Butter, Ginger and Chili-Sesame Sauce, serves 6
2 ½ lbs Flank Steak
1 large mango, peeled and cut into slices
Peanut Butter, Ginger and Chili-Sesame Sauce
3 cloves garlic
1 inch piece of ginger, sliced
1 ½ inch piece of hot red chili (with seeds)
2 Tbs Hoisin sauce
2 Tbs soy sauce
½ cup peanut butter
2 Tbs sesame oil
1Tbs rice wine vinegar
¼ cup brown sugar
¼- ½ cup hot water
Add everything to the blender, and puree.
Use only as much hot water as it takes to blend it into a nice smooth sauce.
Adjust flavor as needed with extra soy, sugar or hot chili.
Marinate the steak in about 1 cup of the sauce, refrigerating for at least several hours.
Preheat the oven to 450 degrees.
Line a large sheet pan with tin foil.
Place the steak on the sheet pan, and sprinkle with sesame seeds. Add the Mango slices to the pan. Add a few sprigs of cilantro.
Roast the steak and mango’s for about 7-10 minutes or until the steak is done to your liking. Let the meat rest for a few minutes when it gets out of the oven.
Slice the steak and serve on a platter drizzled with sauce. Add the mangos to the platter.
Serve hot and Enjoy!

This is the second recipe I have made since discovery your website and OMG was this the bomb diggity! My youngest son even requested it for his next birthday dinner. But he won’t have to wait that long!
