Strawberry Bars
Are you wondering why on earth I would be posting a strawberry recipe in September? If you are, I would agree with you, it is weird. But I am not making the bazaar weather this year, and when I find strawberries at the grocery store for $1.69 for 2lbs. I buy them, and that ladies and gentlemen is how we get strawberry bars in September.
These are really more of a snack bar, but in my house, there is no such thing as leaving good enough alone. We topped each bar with chocolate or vanilla ice cream and ate them for dessert last night.
They are a two bowl recipe, and very easy to make. Probably would make a great “lunchbox” dessert too ☺
Strawberry Bars , makes 24
6 cups sliced fresh strawberries
½ cup white sugar
1Tbs cornstarch
3 cups AP flour
1 cup white sugar
1tsp baking powder
½ tsp salt
1 stick cold butter
1/3 cup milk
1 egg
1 tsp vanilla
Preheat the oven to 375 degrees, and grease a 9×13’ glass pan.
Add the sliced strawberries, sugar and cornstarch to a bowl. Lightly toss to mix everything together. Set aside.
In another large bowl, mix together the flour, sugar, baking powder, and salt. Mix everything together.
Cut the butter into small pieces.
Cut the butter into the dry ingredients with a pastry cutter.
Beat the egg and the vanilla together.
Add the milk to the egg and vanilla and pour into the bowl with the dry ingredients and the butter.
Mix everything together, (you can use your clean hands if necessary) until you have a crumbly dough.
Take about 2/3rds of the dough and pour it into the bottom of the greased pan.
Press it down with your hands until it has formed a thick crust on the bottom.
Pour the sliced strawberries evenly over the crust.
Scatter the remaining dough crumbles over the top of the strawberries.
Bake the bars at 375 for 50 minutes.
Remove from the oven and let the bars cool before cutting them into squares.
(Serve them as a snack or with ice cream for dessert!)
