I have several recipes for banana bread (although I recently realized I have never posted any of them!) However I am always looking for the better, moister, more flavorful, more delicious version of banana bread! I have seen a ton of recipes lately, but this time I looked a little closer to home- like in my blog!
This banana bread recipe is an adaptation from my spiced pumpkin bread recipe (which is divine if I do say so myself!) So we will see how it works with bananas, and a few other changes.

I made this for Pia and Coco for breakfast. It was really Pia’s idea, since she wanted to throw away the bananas that were “yucky.” Then along ran crazy mom and saved them from the trash can and taught her all about what you can make with a brown banana!
By the way, I prefer any banana bread recipe with toasted walnuts, we were just out! Look for the note about when to add them if you like them too.
1 cup butter, soft
3 cups sugar (I know, I know!)
3 cups flour
1Tbs baking powder
1 tsp baking soda
1 tsp salt
½ tsp ginger
½ tsp cinnamon
2 cups mashed bananas
1/4 cup milk
Optional: 2 cups toasted walnut pieces (add at the same time as bananas)
Preheat the oven to 350 degrees. Prepare two loaf pans.
Fill a bowl with 2 cups mashed very ripe bananas. (This took way more than I thought it would- like 2 medium bananas and 2-3 small bananas.)Set aside.
In the bowl of a standing mixer, add the butter.
Add the sugar and beat the butter and sugar together until fluffy.
Add the eggs, and scrape down the sides of the bowl. Beat the eggs with the butter and sugar until fluffy.
Combine all of the dry ingredients.
Add the dry ingredients to the mixer, and mix until well combined.
Add the mashed bananas and the milk to the batter and mix to combine.
Evenly divide the batter between the two loaf pans.

Bake the bread for about 55-65 minutes, or until a toothpick inserted in the center of the bread comes out clean.
Side note! It turned out rediculously moist and delicious. In fact I litterally made myself sick by eating almost an entire loaf to myself. I know, I know, oink, oink.Print Recipe
