Pomegranate Fizz Cocktail
Last minute cocktail for the party you are throwing tomorrow night?!
Or maybe you are like me. Feeling old and tired and dying to wear sweatpants and watch movies on the couch with my poor husband (who wonders whatever happened to his fun wife….) if that’s how you feel- fight back!! Get out a sparkly dress (I don’t think they make sequined sweats- but what do I know?) Maybe this cute cocktail will put some oomph into your step! I am going to drink this all night (while I lie on the couch and watch movies….)
I love a Vodka Soda- Clean and simple with a good splash of lime. This is pretty much the same thing, but it is kicked up with these gorgeous ice cubes and the subtle sweet and sour and bitter flavor of the pomegranate seeds.
The real stunner of this drink (besides the Vodka!) is the ice cube. I happened to have cool sphere shaped ice cube makers- but plain old cubes would be just as cool. I cracked open one of the pomegranates that I had piled up for decoration over the holidays and that is how the whole thing came together. See below!
Pomegranate Fizz
2 oz Good Quality Vodka
5oz club soda
Squeeze of Lime
2-3 pomegranate seed ice cubes
After plucking (or beating with a spoon!) the pomegranate for all of its seeds, pack the seeds as densely as possible into the ice cube tray.
Fill the cubes with water so that they all freeze together. Plop into the freezer for the day or over night.
In a fresh (preferably chilled glass) place the ice cubes.
Add the Vodka and then the soda.
Finish with a squeeze of lime. Enjoy!
Below is another version, where I added about 1-2 oz of Pom juice. Delicious- but not quite as pretty as the clear drink!

Ooo, but this makes it hard because I’d be tempted to eat the bread instead of making the pudding! Maybe I’ll double the recipe and make both!!
