Pear and Cardamom Muffins
Lots of times when I am having a party, I will use large bowls of fruit in place of flowers as a centerpiece. Last weekend, a big bowl of brilliant yellow-green pears sat in my living room, and this week I needed to use all of those pears before they went bad!
So a need to use up a ton of pears, combined with my never ending battle to find ways to get my children to eat new things created these muffins.
They are so moist because of the lovely pear puree, and then the heavenly scent of cardamom perfumes them. Wow- they are so good. Very nice breakfast muffin, or for an afternoon snack.
Pear and Cardamom Muffins, makes 2 dozen
1 cup soft butter
2 ½ cups brown sugar
3 eggs
2 cups pear puree (that was about 2 very ripe pears)
2 ½ cups AP flour
½ cup bread flour
1Tbs baking powder
2 tsp cardamom
1 tsp baking soda
½ tsp salt
Preheat the oven to 350 degrees. Prepare 2 muffin tins with baking spray.
In the bowl of a standing mixer, cream the butter and sugar until fluffy.
Add the eggs and beat.
Add the pear puree.
In a separate bowl, combine the dry ingredients.
Add the dry ingredients to the mixer.
Cream the batter together.
Spoon the batter into the prepared muffin tins.
Bake about 18 minutes. They will be golden on the tops. Remove from the pan, and let cool on a rack.
