Peach Mustard
I have a freakish love to really good spicy whole grain mustard. I also have the same feelings towards a fuzzy, juicy, ripe peach. (weird?) Well folks, I decided to combine the two and make Peach Mustard.
In return, I got a truly addictive summer condiment! It is a great (and easy) way to dress up a whole grain mustard. You simply add ripe peaches, a little honey and some rice wine vinegar. It becomes, a spicy, zesty sweet spread perfect for sandwiches and burgers!
Peach Mustard, yields 1 cup
-2 small peaches, cut into quarters
-¼ cup whole grain mustard
-1 Tbs Honey
-3 Tbs rice wine vinegar
1) Combine everything in a blender and puree until chunky but well combined.
2) Store in the refrigerator until ready to use.

I continue to be in awe of your creativity! If honey and mustard go well together (they do) then peaches, also sweet in a honey-like way, and mustard must work as well. So many wonderful possibilities with this condiment.
