This is how Halloween goes at our house:

A month before Halloween, I decorate the living bajeezus out of my house. My husband quietly frowns while things like fake spider webs get stuck in his hair. But the girls and I shriek and squeal with delight as glitter falls in our food. Decorations are worth it.

I hold off as long as humanly possible to purchase the Halloween candy. I know that the second it gets to the house, I will eat it.

So I use all of that willpower up before we even get to Halloween. Then, the morning of, I go out and buy a ridiculous amount of candy, and only candy that I love. WHY!??? Why do I do this???!!

Then, per usual, we get approximately 6 kids that come to my crazy decorated, pumpkins glowing, over candied house. WHY!???? Why won’t any kids come to our house!!! Cause we live on a hill. I wouldn’t have climbed a hill like that for candy either.

So guess how it ends? With me in a lump on the floor, dressed like Scooby doo and surrounded by candy wrappers and mountains of candy. It’s a vicious cycle.

In an attempt to get all those little candy bars in shiny wrappers out of my grubby little hands I baked them into treats. Treats I can pack in my kids lunches, and treats that I could drop off at the neighbors and send home with babysitters! That is how these Twix cookies were born. These crispy, chewy, sweet, gooey, let me sleep in-a-bed-of-these cookies.

Twix Cookies, makes 2 dozen large cookies
-1 cup salted butter, softened
-1 ½ cups white sugar
-2 tsp vanilla
-2 eggs
-2 ¼ cups flour
-1 tsp baking soda
-1 tsp salt
-16 mini Twix bars

1)Preheat the oven to 350 degrees, and prepare two sheet pans with parchment or silpats.

2)In a mixing bowl, cream together the butter and sugar until creamy.

3)Add the vanilla and the eggs and beat until creamy

4)Meanwhile mix the dry ingredients together in a separate bowl.

5)Add the dry ingredients to the mixing bowl and stir until you have a thick cookie dough.

6) Cut the Twix bars into small pieces.

7) Add the Twix pieces and mix into the batter.

8)Scoop the cookies onto the sheet pans and bake at 350 for about 10 minutes.

9)When you take the cookies out they should still be a bit doughy and puffy looking in the middle- they will “fall” and stiffen up.

10)Place them on a rack to cool.
