My love for Nachos is vast and wide.
Yesterday, I gussied up Pork and Beans. Today I am putting a tuxedo on nachos with the addition of Waygu beef.
Let your friends know you will be whipping up a big batch of Waygu Nachos this weekend, and watch them flock to your couch…
Waygu Nachos, serves 2
1/4lb waygu ground
1 tsp chili powder
Kosher salt to taste
1 large jalapeno, sliced
¼ cup pickled red onions
1 cup black beans
¼ cup queso fresco
½ large avocado
1 roma tomato
2-3 large handfuls of chips
cilantro for garnish
In a sauce pan, gently cook the waygu while breaking it up. Add the chili powder and salt and mix into the meat.
Only cook the meat for a minute or so, as it will finish cooking in the oven.
Set the meat aside, but keep the pan hot.
Add the jalapeno to the pan and cook in the waygu fat for a minute or two or until lightly browned and aromatic. Set aside.
In a baking dish, add the chips, and sprinkle the black beans over the chips. Add the jalapeno, pickled red onions, waygu and queso fresco.
Bake at 350 degrees for about 7 minutes or until everything is hot and the cheese is getting golden.
Sprinkle the top with the freshly chopped tomatoes, a little more fresh queso and chunks of avocado.
Top with cilantro and serve with salsa verde, guacamole and cilantro lime creme.
