One more baked Donut recipe!
Plus they have brown butter in them. The greatest ingredient ever.
This batch was actually whipped up after dinner a few weeks ago! We were all craving something sweet, and it was in the middle of my Donut baking binge before valentines day when I made like 50 dozen of those Chocolate donuts with blood orange glaze. (sorry- that’s why there are no pictures- it was SO dark in the kitchen! But easy- so don’t worry!)
We compromised with banana donuts! Pete and I ate ours hot and rolled in powdered sugar (O-M-G!!!!)
But I have two little chocolate monsters on my hand, so I threw together this fast and easy chocolate glaze for their donuts.
Also- I cannot stress this enough: these are so, so, so easy to make!! And so much healthier than frying (not that I am opposed to a little deep frying now and again) especially when you can sneak veggies or fruit into them!
Since I cannot guarantee I won’t just keep on making baked donuts, and I know some of you are having trouble finding the pans, I am going to give away 5 of them. These are Wilton Pans, and this exactly what I use.

Brown Butter Banana Donuts with Chocolate Glaze, makes 16
2 cups AP flour
1 ¼ cups sugar
2 tsp baking powder
1 tsp salt
½ tsp cinnamon
¼ tso nutmeg
¾ cup buttermilk
½ cup mashed ripe banana
2 tsp vanilla
4 Tbs butter
½ cup cream
2 Tbs corn syrup
4oz chopped dark chocolate
Preheat the oven to 350 degrees. Prepare a donut pan with cooking spray.
Melt the butter in a small saucepan and let it cook over low heat until browned, (not burnt like I did the first time.) then set it aside to cool a little.
Mix all of the dry ingredients together in a large bowl.
In a smaller bowl, mix together the buttermilk, smashed banana, eggs and vanilla.
Pour the wet ingredients into the dry ingredients and mix well.
Add the brown butter to the batter, mixing well to incorporate.
Add the batter to the donut pan, (I had to bake mine in 3 batches.)
Bake the donuts 8-10 minutes, or until just baked through but still soft and springy to the touch.
Place the donuts on a cooling rack while baking the rest of the donuts.
Meanwhile, make the chocolate glaze:
Combine the ½ cup of cream, 2 Tbs corn syrup and the 4oz of dark chocolate to a small sauce pan.
Wait until the cream is simmering, and then add the corn syrup and remove from the heat.
Whisk until the chocolate has melted and you have a smooth and shiny chocolate glaze.
Dip each donut face down into the chocolate and use a swirling motion to prevent drips.
Sprinkle the donuts with colored sugars promptly if desired.
Enjoy immediately!Print Recipe
