I know I have mentioned this before. I don’t really do so well in stressful and or panicky situations. Mostly I freeze up. In the aftermath, I feed people. I didn’t say that it helps- but it is what I do.
On Saturday, my 92 year old Grammy took a spill. Subsequently she fractured her pelvis, hip and elbow. Since then, she’s been put all back together again, and when I saw her today she was incredibly feisty and complained about the terrible hospital food- which I took to be a very good sign.
And of course, because I have been worried, I have been cooking and baking. A lot.
These were the cookies I brought for her and her nurses. Good thing I made a double batch, because I can’t seem to help myself either. Did I mention I am a stress eater too?
You just cream together the butter and the sugar, and then the eggs until the batter is nice and fluffy.
Combine all of the dry ingredients too.
Mix the butter/sugar and the dry ingredients together until you have a thick dough.
Scoop the cookies out onto a sheet pan and throw them in the oven.
Gobble up still warm if you can. So good.
Recipe: Cashew Butterscotch Cookies, makes 2 1/2 dozen
Ingredients
- 1 cup butter
- 1 ½ cups sugar
- 2 ¼ cups flour
- 2 eggs
- 1 tsp baking soda
- ½ tsp kosher salt
- 2 cups salted, roasted cashews, chopped
- 1 bag butterscotch chips
Instructions
- 1) Preheat the oven to 350 degrees. Prepare 2 sheet pans with a silpat or parchment paper.
- 2) In the bowl of a standing mixer, cream together the butter and the sugar until fluffy.
- 3) Add the eggs and beat until fluffy.
- 4) In a seperate bowl, combine the flour, baking soda, salt, cashews and butterscotch chips. Mix together.
- 5) Add the dry ingredients to the bowl and mix until well combined.
- 6) Scoop the cookies onto the prepared sheet pans
- 7) Bake the cookies 10 minutes at 350 degrees, and then remove from the sheet to cool.
- Enjoy!

Oh no! I hope your Grammy is doing better now. When I get stressed, my mind tells me that cookies solve everything. SO I tend to bake my heart out. It usually helps a bit. And I love that this only makes 12 cookies. Built-in self control!

Oh no!!! I am so sorry!! I too, and really close to my grams and would just feel horrible awful terrible is anything happened to her. Especially such painful injuries like that!

Oh Heather I’m glad she’s doing better and i hope she recovers well. I’ll make these soon for my girls but I might put peanuts instead (they don’t alllike cashews very much) 2 1/2 dozen wow. And I promised to let you know how I’m doing on the juice fast, on saturday it will be four weeks and I lost about 7 kilos not quite sure since I weigh in on saturdays at a friend that is about 14 pounds I think. Anyway doing good and will continue for a while.

Also, I make a cashew butterscotch bar that is delicious but is a bit time consuming. I never thought to make it into a cookie – you are GENIUS! These are everyone’s favorite and you just saved me from having to make & cook a separate crust! (Really, it added only about 5 mins to the process but 5 mins makes a difference with 4 little ones!) Hmmmm…….interesting. I had leftover cashews from cashe chicken, and wanted to use them up before leving on vacation. Second pan is in the oven now. Wishing I cut the recipe in half, as I’m up to two dozen,and I’m only halfway through the dough. I think my parents might enjoy a container of these when I arrive in Arizona.
Hello! I saw this recipe on MSN and HAD to make it! I have had a few problems w/ my cookies not looking near as good as yours. They are a greasy mess. They still taste good but they spread out like crazy and I had to bake them 5 min longer just to be able to get them off the cookie sheet in one piece after letting them cool for 10 min on the cookie sheet. Is it possible that instead of 1 cup of butter it was supposed to be 1 stick? Just wondering….
The dough taste amazing and so do the cookies but they look just terrible, so I won’t be able to take them to my families X-mas.
Hi Leslie, It should be 1 cup. Is it possible that you shorted the flour amount? that is a super standard cookie recipe, so they shouldn’t have had anything weird- so sorry that happened.
