I meant to post earlier this morning- I really did. Because I was going to get all this work done last night because I was away from the kids and it was going to be so quiet and easy to accomplish lots of things in a clean, quiet hotel room. Instead I had drinks with friends, went out to dinner with my husband and then an hour later, I additionally ate an entire cheese platter by myself at 9:45 and then promptly went to sleep at 10 pm last night. To be clear- that is 7pm Seattle time. (I’m a hot date, huh?)
And to be completely honest after I had a drink at 5:00, I would have been happy to go to sleep for the night by 6:30. East Coast time. I think being a parent is wiping me out. I can barely even enjoy New York I am so sleepy! Anyone have secrets to being a rested working mommy? Or just getting your kids to sleep through the night? Please share them.
And, remember when I said that I was going to share all these cool Christmas Decoration pic’s with you? I’m like the worst ever. I’m so busy drinking coffee and shoveling in the candied street nuts that smell like toasted marshmallows that I keep forgetting to take them.
But I have been eating a lot (and not just from the mini-bar per usual). And Pete and I went Christmas shopping which was fun. And I walked a ton yesterday. In fact I walked so much (in heels) that the little metal spindle pushed through the bottom of my heels and I had to stop at macy’s and buy these flats. Pretty cute, huh? (I have huge skeletor feet. Sorry.)
Oh, but now I will stop talking and move on to this noodle dish I have here for you.
Fried Ginger Noodles with Spicy Beef. As good as it sounds. Please try it.
Crispy fried noodles, sweet and sour and salty dressing and spicy beef- It is seriously delicious.
To make this dish, this is what you do:
In a medium bowl, combine all of the ingredients for the Beef Marinade. Marinade the beef for at least 2 hours or up to 24 hours.
For the noodle sauce:
In a small bowl combine the scallions, fresh ginger, vegetable oil, vinegar and soy sauce and set aside.
Heat a large non-stick pan over medium-high heat. Add the Flank Steak and cook about 2-3 minutes on each side. Transfer the steak to a cutting board and let rest. Reserve the pan with the drippings.
Meanwhile, bring a small pot of water to a boil, and cook the ramen noodles for about 2 minutes (think top ramen!)
Again, heat the same pan to high. Add the sauce to the pan and then the noodles. Fry the noodles until they start to get a little crispy, about 3 minutes. I was pushing them down hard in the pan with a spatula so they got a little sear on some of them.
While the noodles are frying, thinly slice the beef.
Transfer the noodles to serving bowls and top with the beef. Garnish with some fresh cilantro and chili garlic sauce if desired.

Ingredients
- -8 ounces flank steak
- Beef Marinade:
- -1/2 cup soy sauce
- -3 tablespoons water
- -1/3 cup honey
- -2 tablespoons sesame oil
- -2 garlic cloves, crushed
- -1/2 teaspoon red pepper flakes
- -2 tablespoons scallions, thinly sliced
- -1 teaspoon toasted sesame seeds
- For the Ginger Scallion Noodles:
- -1 package ramen noodles
- -1 ½ cups scallions, thinly slice
- -¼ cup fresh ginger, minced
- -1/3 cup vegetable oil
- -¼ cup sherry vinegar
- -1 tablespoon soy sauce
- For Garnish:
- -Chili sauce or siracha, fresh cilantro
