This is sort of an unusual post for me, but I need your help.
I am going to an awesome party this weekend, and it is all about chili. In my opinion this is the greatest idea ever, and I could swear that I even wrote about a few years ago. Some neighbors of ours have an annual chili competition/party (that is usually flush with margaritas.) Everyone brings their huge pots or slow-cookers full of chili and then the whole party has sample bowls (which are the size of real bowls so that when you are done FULL doesn’t quite express it) and you sample everyone’s chili and EEK, judge it. (How great is that!!?) It makes me wish I thought of it.
People come out of the woodwork with their secret chili recipes, and this year it’s shaping up bigger than usual, which means even more competition.
Now I have never actually entered this competition. I’m too intimidated. I mean, I just feel like there is no way I am going to win, (I have tasted some AMAZING chili at this thing) and then is it embarrassing that this is what I do for a living and I won’t win? Right? Well, in an attempt to get over myself and actually have fun and participate, I am indeed going to enter the Great Chili Cook-off of 2013. But what chili to make???
Pulled Pork and Butternut Squash Chili
Please help me. Any thoughts about any of the chili recipes I have? Do you have an awesome recipe that I should try? If you do, PLEASE leave a link to it, or just post the recipe in the comments. All tips and advice are greatly appreciated!!

My vote is the white chicken chili. My recipe is not quite like yours but EVERY single time I make it – it gets rave reviews. And to me its just the same white chicken chili. I use green chilis instead of jalapenos, for a more mild taste- I also make a roux with butter & flour after sauteeing the veggies. then add chick broth to dilute. Towards teh end of cook time add a cup of either heavy cream or sour cream to make it delicous and creamy. I then also add some montery jack cheese. Serve garnished with more cheese, sour cream, crushed tortilla chips, avocado, and cilantro! YUM!! good luck!

I think your pulled pork and butternut squash chili is unique and I bet you’d win with this recipe!
If you opt for a beef chili I always used stew beef to twist it up a little. Good Luck Heather, I know you’ll be the best!

I love all of your recipes, especially the Pork Chili Verde, I have an affinity for green chilies. I think for a competition, definitely soak your own beans, maybe roast some of your own chilies. Oooh and booze, or perhaps coffee.

Hi Heather, what an amazing idea! I think I might just have to steal it because it sounds so tasty and fun. I hope you’ll post pictures of the entries. Here is a link to my favorite chili recipe. It’s bold, beefy, and really satisfying. I like my chili with beans, and this one is a chili con carne with chunks of beef, bacon, and homemade chili powder made from whole dried chiles toasted in the oven and fried up with spices and aromatics in oil. I’m making myself hungry!
