Helllloooooooo Crispy Thai Chicken Wings with Peanut Sauce!
A little wordy, I know, but seriously, seriously out of this world, grub-a-dub good.
I downed the better part of a batch of these yesterday. But in my defense I was ravenous, as I had just gone to Step Aerobics. And I have a few things to say about Step Aerobics. 1) Despite my “New Years” resolution (which was not about weight loss- it was about learning to exercise again!), this was the first time I actually went. Really the first time I had been to a gym in almost 2 years. I thought that the dancing part would make it fun enough that maybe I would stick with it. Which leads me to 2) I am really uncoordinated. Really uncoordinated mixed together with really out of shape is a really awkward thing to behold. The teacher asked if I was “ok” after the class was done. Wow. Embarrassing.
Anyways, then I came home and made fried chicken wings. Quite a swap, huh!? I wanted to come up with a new and different chicken wing recipe for you for Superbowl Sunday this weekend. This is unique for sure. I flavored the flour with Thai spices and made a homemade peanut coconut sauce to toss the wings in for the most amazing flavor!

To make these wings, this is what you do:
In a large heavy pot, start heating a quart of oil. Put a thermometer in the oil, and start bring the temperature up to 375 degrees
While you are waiting for the oil to heat up, combine all of the dry ingredients in a large shallow dish.
Rinse the chicken well and shake the extra water off. Dredge the chicken through the flour and set aside.
When the oil has come up to temperature, add half of the chicken and stir every so often while the chicken is frying. This will take 12 minutes. Make sure the oil stays at the right temperature, adjusting the flame if needed.
While the chicken is frying, make the sauce. Combine everything in the blender and puree until smooth. Transfer the sauce to a large bowl.
When the chicken is finished frying, transfer the chicken to paper towels to drain for a second. Start the second batch of chicken wings.
Then add the chicken to the sauce and toss with the sauce.
Eat while hot!

- For the Fried Chicken Wings
- -2 ½ pounds chicken wings (tips on)
- -1 cup rice flour
- -1 cup AP flour
- -2 tsp Kosher salt
- -2 tsp garlic powder
- -½ tsp coriander
- -¼ teaspoon cayenne
- -1 quart of vegetable oil
- Peanut Coconut Dipping Sauce
- -1 red chili, minced
- -2 garlic cloves, finely minced
- -2 Tbs ginger, finely minced or grated
- -1/8 cup green onion, thinly sliced
- -2 Tbs rice wine vinegar
- -2 Tbs soy sauce
- -1 Tbs peanut butter
- -1 Tbs plus 1 tsp sesame oil
- -½ cup coconut milk
