A couple things before I get into this Fresh Pea Soup for the first day of Spring!! (beautiful, isn’t it?!)

Ok, Now we can talk about this soup. Pia made it. She is just biding her time till she learns how to type so she can “have her own blog” but she asked if in the mean time she could start contributing some recipes. And she said “contribute.” And then I looked at her like, “Um, did you just say contribute?” “uh, yeah, sure, of course.”
So item number one that my 5 year old daughter wanted to make was this fresh Pea Soup. She watched Bobby Flay on TV visiting the Alice Waters of Ireland at 5:30 AM last weekend and saw her make a soup like this. She was like, “I can totally make that” So we did. And do you know what my little butterfly of a child did next? She added honey to the soup. She said “mom, it is all about balancing the flavors.” Who is she?
The honey was a really nice addition. She wanted to name this fresh pea and honey soup, but was scared that would scare you. You should make this. It is seriously one of the easiest, healthiest and most delicious soups I have had in a while. And blessed Trader Joes carries fresh peas already hulled all year round!
This would be stunning on the Easter table, right?
To make this soup, this is what you do:
In a large pot, melt the butter and add the onion and sprinkle with kosher salt. Sweat the onion and butter together until soft, about 5 minutes. Add the chicken stock and simmer 10 minutes. Add the peas and cook barely 1 minute!
Transfer the soup to the blender and puree on high, (you may have to do this in batches.)
Reheat the soup gently and season well with kosher salt. (I garnished with pea sprouts, chives and buttered croutons)
Recipe: Fresh Pea Soup
Ingredients
- -1 tablespoon butter
- -1 yellow onion, rough chopped
- -4 cups chicken stock
- -4 cups green peas, hulled
- -2 teaspoons honey
- -kosher salt
Instructions

This soup looks very green and very delicious! I think I am the only one in my family that would it though! Everyone is afraid of green!

I just about swooned when I saw that first picture at the top of your post. So pretty and delicious-looking. The honey is a very interesting addition. I think it is absolutely adorable that Pia wants to follow in her mother’s footsteps. That’s the ultimate compliment, isn’t it, when your kids want to be just like you?
