I am so full of ham and biscuits I just had to shoo my guests out the door so I could peel my jeans off and put on elastic wasted sweat pants and sit down and immediately tell you about how it was like the best dinner EVER and how you have to make it next weekend.
Anyone hosting Easter next Sunday? I made this for you. And I think it would work for Brunch, Lunch or Dinner (and you can’t say that about many things!)
A new twist on an old fashioned spiral ham and a rather untraditional way to serve that traditional Easter dish.
First I glazed the ham with a sweet and tangy and slightly spicy Apricot Glaze. Then I warm the whole ham until it gets all glazy and has a lovely crust on the outside while staying juicy and tender and super flavorful on the inside.
(It turns out- that part is really easy. I bought a precooked spiral ham, so seriously I just heated it up for like an hour.) In the mean time, (only an hour!) I whipped up a whole bunch of different kinds of biscuits as well as a big old batch of Goat Cheese Butter.
A Biscuit Bar! People went through the line and selected their favorite variety of biscuit, slathered it with butter, or goat cheese butter and slapped on a few pieces of ham. Some of us even added a drizzle of honey too.
Oh man. I can’t even tell you how good this is. FREAKING AMAZING. I’m not even embarrassed about not fitting in my jeans for the rest of the night because everyone here tonight rolled out moaning of a stomach ache from over eating. Sorry guys- but that’s when you know it was really, really good.
*The biscuits shown in the photo or Guinness Cheddar, but I also served Pumpkin Sage, Buttermilk and Honey (coming soon!!) Blue Cheese and Chive (coming soon!) Cheddar and Jalapeno Biscuits.
To make this, this is what you do:
Preheat the oven to 325 degrees. Mix all of the glaze ingredients in a small saucepan and whisk together over medium heat. When the jam has totally melted into the sauce, set aside. Put 1 cup of water in the bottom of a roasting pan and place the ham inside the roasting pan, sliced side down in the water, skin side up.
Pour half of the glaze over the ham and then loosely tent the ham with foil. Place it in the oven and bake it for 45 minutes. Take the foil off of the ham. Pour the other half of the glaze over the ham and bake another 15-20 minutes until the glaze has melted again into the ham.
Remove the ham from the oven and gently slice the ham away from the bone and lay out on a platter. Set the ham out with the biscuits, goat cheese butter and a bowl of honey!

Ingredients
- -10 pound spiral ham, precooked

OH good Amy!!! Yes- I served a wilted Spinach salad and a fruit platter. Then we had strawberry Rhubarb crisp for dessert- it was so good. I am still full!

2 cups flour
3 teaspoons baking powder
1 teaspoon kosher salt
4 tablespoons butter
1 Tbs honey and
3/4 cup buttermilk.
Pulse together in the food processor and cut out. bake at 450 for 8 minutes 🙂

Amazingly delicious – and simple. I’ve been searching for a low key but still interesting Easter dinner for a few years now – and this is it! My husband loved it, my 3 year old thought making the biscuits was fun and my 9 month old looked like he wished he could have had some of that ham too. Thank you!
