Grapefruit Mint Vodka Cocktail

A couple of orders of business today. I have officially decided that Thursday’s are going to be for cocktails. Because I like them, and they are fun to concoct, and often even more fun to drink. Is everyone ok with that? If booze isn’t your thing I guarantee that most all of my cocktails can be converted into delicious mocktails. Just ask my daughters, they are bog fans ☺ Does anyone have a good name for this day? Cocktail Thursday sounds lame….

Also- speaking of cocktails, don’t forget to come have one with me tonight at 1000 Spirits in Downtown Seattle. Festivities start at 6:30- with tons of delicious appetizers!!

Ok. Now, lets move on to the cocktails. Remember weeks and weeks ago when I went to Palm Springs with my girlfriends? I know, probably not, I barely even remember it. Feels like it was months and month ago…

But anyways, we stayed at a dear friends house, and she had a huge grapefruit tree in her back yard. Really gorgeous, sweet monster-huge grapefruit. (The last time I was there and had access to that tree, this is what I made.)

But on this last trip, which was all grownup ladies, I was in charge of the cocktail hour every night. Fitting, huh? And I went out and picked a ton of them and we squeezed all of them for the fresh juice and made these wonderful Grapefruit Mint Vodka Cocktails.

Grapefruit Mint Vodka Cocktail

They are dangerously good and I haven’t been able to stop thinking about the since.

To make a Palm Spring Sling (I just made that up! sorry) this is what you do:

Juice the grapefruits.
Grapefruit Mint Vodka Cocktail

In the bottom of 4 tall glasses, evenly distribute the mint and raspberries.

Grapefruit Mint Vodka Cocktail

Add the simple syrup and the vodka and ice. Top with fresh grapefruit juice and stir to combine. Serve immediately.

Recipe: Grapefruit Mint Vodka Cocktail

Ingredients

  • -2 large grapefruits, juiced
  • -4 tablespoons simple syrup (1/2 cup sugar and ½ cup water simmered together for 2 minutes and then chilled)
  • -4 tablespoons fresh mint
  • -20 raspberries
  • -8 ounces chilled vodka
  • -ice

Instructions

  1. In the bottom of 4 tall glasses, evenly distribute the mint and raspberries.
  2. Add the simple syrup and the vodka and ice. Top with fresh grapefruit juice and stir to combine. Serve immediately.

Preparation time: 5 minute(s)

Cooking time: 5 minute(s)

Number of servings (yield): 4
