I am writing this while I lounge in bed. Post making brunch and pre making some dinner. I am also simultaneously pulling all of the stuffed animal hair out of my nice hair brush. While the grown ups ate quiche today, the kids played beauty parlor with my hair brush, makeup brushes and hair spray and their stuffed dogs. Kinda Gross.
Haha, its another “Happy Mothers Day!!” I hope that you are cooking less than me and reading more magazines than me ladies!
But in the interest of more “resting” time, (code for watching more New Girl On Demand) I have a quick and easy cookie recipe for you. This is one that I have been making for the kids lately (well, and also me too!) because it is nut free (so they can actually take it to school) and totally delicious. Coconut Blueberry Cookies. Perfect. Please try!!
Recipe: Coconut Blueberry Cookies
Ingredients
- -1 cup butter, softened
- -1 ¼ cups white sugar
- -2 eggs
- -1 teaspoon vanilla
- -1 ½ cups flour
- -1 teaspoon baking soda
- -¼ teaspoon nutmeg
- -½ teaspoon salt
- -3 cups oats
- -2 cups shredded unsweetened coconut
- -2 cups dried blueberries
Instructions
- 1. Preheat the oven to 350 degrees.
- 2. In the bowl of a standing mixer, cream together the butter and sugar until fluffy.
- 3. Add the eggs and the vanilla and beat until creamy.
- 4. In a separate bowl combine the flour, baking soda, nutmeg and salt and add it to the batter.
- 5. Then mix in the oats, coconut and dried blueberries until everything is well combined.
- 6. Scoop the cookie dough onto silpat lined sheet pans by the spoonful and bake them 10 minutes at 350 degrees until golden.
- 7. Let cool and keep in an airtight container until ready to serve.

Happy Mother’s Day Heather!!! I remember those stuffed animal days. My daughter cut off her Whoozle’s fuzzy hair and used jewelry to decorate her Teddy bears. These cookies sound delicious. One of my favorite childhood cookies was called Coconut Jumbles; probably out of Betty Crocker. I will definitely give these a try!
Blueberries in cookies?! That sounds healthy enough to be consider breakfast!! haha

I LOVE this! Coconut and blueberries – what a fab combo. Dried blueberries are something I don’t buy very often (not sure why, I really should) so I can totally see myself buying some just for this delicious cookie!
