Blueberry Lime Margaritas

Some like it hot! And I think they live here in Texas! Being a Seattle girl, I am like a fish out of water. Scampering into shadows and slathering SPF 100 on. I think Austin is going to be even hotter- How do you guys do it?? I have barely glimpsed Dallas, where I will be for a grand total of about 15 hours before I leave for Austin- but I like what I see!! Everyone is just so nice. My cab driver said “YEEEEEEE-HAAAWWWW!! WELCOME TO TEXAS!!” I love it!

But in all this heat, all I can think about is an icy cold drink…

And since I am obsessed with blueberries, and even more specifically with Blueberry Simple Syrup that’s the focus of today’s “Thirsty Thursday”! I have been putting the syrup in lemonade, mixing it with sparkling water for a fresh fruity spritzer and now I have doused it in tequila and grand marnier and made it dress up as a margarita. You won’t be sorry I did.

I served this up to a bunch of food bloggers a few weeks ago while we celebrated my friend Gaby’s Book release. We were busy eating chips and guacamole, so margaritas only seemed appropriate, right? Well they won happy reviews and an empty pitcher which is saying something with this group. So you can consider them endorsed.

In fact, this recipe is for two, but I would encourage a “batch” of these. I also think you have to adjust the sweet (blueberry syrup) and sour (lime juice) to suite your taste buds. Everyone likes it a little different, so use your preferences to experiment a little.

Speaking of margaritas, I am in Texas (for the very first time!!), so I fully intend to digest a bunch of them in the next few days. Any other suggestions for Dallas or Austin? If you are in the Dallas area, please tune in tomorrow AM to the “Good Day” show on Fox TV where I am going to do a segment on last minute dinner guests!

Recipe: Blueberry Lime Margaritas

Ingredients

  • ¼ cup Blueberry Simple Syrup
  • ¼ cup Fresh Lime juice
  • 4 ounces Grand Marnier
  • 4 ounces Tequila
  • Blueberry Simple Syrup:
  • 1 cup sugar
  • 1 cup water
  • 1 cup blueberries

Instructions

  1. 1. For the Blueberry Syrup: Bring everything to a simmer and let cook for about 5 minutes over medium heat.
  2. 2. Strain the syrup through a chinoise and reserve juice. Discard the blueberries.
  3. 3. Chill the syrup.
  4. 4. To make the drink, combine ice, the syrup, the lime juice and the liquor in a cocktail shaker. Shake vigourously and then pour into a chilled ice filled glass. Garnish with a lime slice.

Preparation time: 2 minute(s)

Cooking time: 5 minute(s)

Number of servings (yield): 2
