Grilled Caprese Kebabs

OMG. I just have been stress eating like crazy. I mean garbage disposal style. Like I don’t know WHAT is going on with me!!! I suspect it is because I have FINALLY taken up exercising. Well, at least I made it through a whole week of pure barre class and I am considering adding “speed walking” as well. Pretty hard core, huh?

So whether it is the exercising, the long days or just the fact that I am “having a moment” where I am totally happy to cap my nights off with like half a bag of peanut butter stuffed chocolate covered pretzels and other stuff along those lines, I am trying to add more healthy and fresh dishes like these Grilled Caprese Kebabs everywhere I can! (but lets get real it’s still me, and I still have some stuffed cookies I made last week that I feel obliged to share with you VERY soon!)

In the mean time, I thought I would share with you these incredibly simple and easy Grilled Caprese Kebabs. All the ingredients of a simple summer caprese salad, heated up on a smoky grill until the cheese is gooey and melting and the tomatoes are juicy and hot and bursting with sweet flavors.

Grilled Caprese Kebabs

These are so easy to prepare ahead of time and then just quickly grill at the last moment and enjoy hot at the table. Enjoy these at your next summer BBQ, or any weeknight when you happen to already have your dinner on the grill. These make the perfect accompaniment!

To make these caprese kebabs, this is what you do:

Gather the tomatoes, mozzarella, basil and skewers.

Grilled Caprese Kebabs

Take the 5 skewers and thread 2 tomatoes and 2 mozzarella balls and 3 basil leaves on each kebab (alternating). Drizzle the kebabs with olive oil and season with salt and pepper.

Heat a grill to high. Put down a sheet of tin foil directly on the grill and lay the kebabs on the foil.

Cook each side for about 2-3 minutes until the tomatoes get soft and slightly charred and the cheese is melting.

Place the kebabs immediately on a platter to serve and drizzle with balsamic glaze.

Ingredients

  • 20 small tomatoes (but not cherry tomatoes)
  • 20 medium fresh mozzarella balls
  • 30 fresh basil leaves
  • 10 kebabs
