Apricot Rose Donuts
I have a THING for donuts. No doubt about it.
I am always fantasizing about new and glorious ways to fatten them up, stuff them silly, dunk them, bejewel them and sprinkle them with rainbows.
And these are no exception. They were born out of a bowl of ripe juicy apricots and some beautiful climbing roses that were spilling outside my kitchen window.
I couldn’t help myself with these fluffy gorgeous little pillows of fried sweet dough double dipped in a sweet apricot glaze laced with rose water and fragrant floral ribbons of roses.
They are truly beautiful eye candy in my opinion and I think they would be so amazing to serve for dessert after a wonderful dinner or at a lovely brunch, don’t you think?
To make these Apricot Rose Donuts, this is what you do:
Follow the directions for the fluffy doughnuts through the frying.
Finely julienne the rose petals into thin ribbons.
To make the Apricot Glaze, combine all of the ingredients in a medium sized bowl. Using a fork, whisk everything together until you have a finely textured glaze. (I had to really use the fork to break up the apricot as much as possible.)
Dip the donuts in the glaze twice until there is a nice thick coating of glaze over the top.
When they have set up a little, sprinkle them with the little rose ribbons and let them set up further.
Serve warm or at room temperature.
