Happy Thirsty Thursday everyone!! I am starting my weekend early with this Raspberry Lemon Drop, which I am itching for today! Somehow my work life has rapidly tumbled out of control again the last few weeks. Here I was thinking I was leisurely enjoying a piece of the summer, and all of the sudden I am dog-tired from work over-extension.
As a family, we are ready for a little mini-break! We are going to surprise the little kids with a trip to Whistler this weekend. I can’t wait to just relax with my family and if I’m luck, pop back a couple Raspberry Lemon Drops.
I know its so 10 years ago, but I just love lemon drop cocktails! This is like a super summery version of that old classic. By making a syrup from the fresh raspberries
I get the best of the sweet and sour. The best way to enjoy lemon, raspberries and some icy cold vodka…
Recipe: Raspberry Lemon Drop
Ingredients
- 4 ounces vodka
- 4 tablespoons fresh lemon juice
- 4 ounces Raspberry Simple Syrup
- Raspberry Simple Syrup
- 1 cup sugar
- 1 cup water
- 1 cup raspberries
Instructions
- To make the raspberry simple syrup, combine the water, sugar and raspberries in a small pot. Simmer for 5 minutes.
- Strain the raspberry simple syrup and refrigerate until chilled.
- Fill a cocktail shaker with ice cubes. Add the vodka, fresh lemon juice and raspberry simple syrup and shake really well.
- Strain into a chilled cocktail glass.
- *If you want a sugared rim, swipe it with lemon juice and dip it in sugar.

I use to LOVE LOVE LOVE lemon drops. I haven’t had one in forever. This looks fantastic! I’m also curious what Whistler is like in the Summer. I hear good things. I visited for the first time last Winter and thought it was a blast. I was also surprised to learn that it was originally developed as a summer resort. Who’d a thought? 🙂
