So we had the best time in Whistler this last weekend. I had the best intentions to instagram all of our adventures, but then my phone very stubbornly did not want any part of Canadian internet. So I didn’t. But we did everything from bungee trampoline jumping (I did flips!!), to horseback riding, mini golf and human mazes- it was a blast. All of the sudden the girls are at an age where they are so fun and want to do a lot more activities. They are also pretty good and patient in nice restaurants so we did a ton of eating out. And then to our delight came home to an outdoor smore’s bar over a bonfire at our hotel.

But with Sunday traffic it took us seven hours to drive home from Whistler today and by the time we got back we were so tired and so hungry. The kids wanted mac n cheese out of a box. And well, we certainly didn’t. I had a pizza crust and then it was a simple rifle through the fridge and pantry to figure out what was going to go on this pizza.

I had a beautiful red onion, which I cut super thinly and put to caramelizing while I rustled up a wedge of Brie cheese and the last of the beautiful green figs from our tree.

The result was a sweet and savory pizza with my favorite caramelized onions, gooey melting Brie and sweet figs. Um, it was SO good guys! In these last few weeks of fig season, please give this a try- I can’t imagine that you could be anything but over-the-moon happy about it!

Preheat the oven to 425 degrees. Grease a sheet pan with 1 tablespoon of olive oil.

For the Caramelized Onions:
In a large sauté pan, melt the butter over medium heat. Add the onion, sprinkle with kosher salt and sweat for about 5-7 minutes. Add ½ cup of water and stir and cook for another 10 minutes. When the onions are soft and tender and the water has cooked off add the vinegar. Stir until the vinegar has cooked off. Transfer the onions to a bowl and set aside.

Roll the pizza crust out into a thin circle and transfer it to the prepared sheet pan. Run with the remaining tablespoon of olive oil. Sprinkle with kosher salt and put the crust in the oven to par bake for 12 minutes.

When the crust is golden brown take it from the oven. Spread the caramelized onions over the base of the crust. Follow with the pieces of brie cheese and then with the fig slices.

Bake another 5-7 minutes until the onions are hot and the brie is melted.

  • 1 Pizza Crust (I used a Trader Joes)
  • 2 tablespoons Olive Oil
  • Kosher salt
  • Caramelized Onions (recipe below)
  • 8 ounces brie cheese, thinly sliced
  • Fresh Figs, sliced thinly
  • Caramelized Onions
  • 1 large red onion, thinly julienned
  • 2 tablespoons butter
  • Kosher salt to taste
  • ½ cup water
  • 2 tablespoons red wine vinegar
