OMG. Whats it been? Like a whole week or more since I posted a pumpkin recipe? God Forbid. I didn’t want to disappoint you, so I thought that this pumpkin bread with streusal topping might be just the thing to make you very popular this weekend. You think so?
My hubby was groaning just looking at these pictures. Cause this bread is not only incredibly tender and flavorful and delicious on its own, but then you get the double delight with the crumbly, sugary, oatmeal topping that is really like taking the best part of an oatmeal crisp and plopping it on pumpkin bread. Not bad, huh?
We are spending the weekend being extra Halloweeny. Like pumpkin patching it up with the kids, carving pumpkins and then Pete and I are going to a wild Halloween party on Saturday night. We settled on Caesar and Cleopatra. This is a major departure for me since I usually go as things like a giant chicken. Or Scooby doo. But this will definitely be a theatrical Cleopatra, as I am strictly a “non-sexy” kind of Halloween costume wearer.
If our costumes turn out well, I will share a picture. If they don’t, then I sill scrape the whole incident under the carpet and pretend it didn’t happen. Fair enough?
Oh, and last but not least, it is my dads birthday this weekend! Which brings me back to this bread. I am going to make it for him. He is an avid bicyclist and I thought he would enjoy some of this in his bike pack as a special treat. My little family will obviously be happy to devour anything he doesn’t eat! Recipe: Pumpkin Bread with Oatmeal Streusal
Ingredients
- ½ cup butter
- 1 cup sugar
- 2 eggs
- ½ cup pumpkin puree
- 1 ½ cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ginger
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- Streusal topping
- 1 cup oats
- ¼ cup sugar
- 1 teaspoon cinnamon
- 6 tablespoons very soft butter
Instructions
- Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray.
- In the bowl of a standing mixer, cream together the butter and sugar until fluffy.
- Add the eggs one at a time and beat until fluffy and then add the pumpkin and mix until well combined.
- In a separate bowl, combine all of the dry ingredients and then add them to the batter.
- Transfer the batter to the prepared loaf pan.
- In a separate bowl combine the oats, sugar and cinnamon. Cut the butter in with a pastry cutter or forks (or fingers!) until the streusal is a nice crumbly texture.
- Sprinkle the streusal generously over the top of the bread batter.
- Bake the bread at 350 degrees for 45-50 minutes. Let it cool completely before turning it out and slicing it.

I am not being picky, I just want to clarify. In the recipe you say 1/2 cups pumpkin puree. Did you mean 1/2 cup or 1 1/2 cups? I want to make this but I want to get it right.
