I did this last year too. I made some crazy snack mix and thought I wouldn’t like it. Then I “sampled” it. Then I ate almost all of it. In fact it turned into a serious problem. Snack crack if you will.
Cispy popcorn and corn chex cereal are coated with white chocolate and autumn spices and then tossed with candied pecans and dried sour cranberries. Heaven help me, it is so addictive!!
I feel like a big bowl of this set out in your family room would probably drive people wild. I also made a batch to take skiing this weekend. I mean, snacks are imperative in the car right?
ok. You will either love me or hate me when you make this. Love me for the taste, and hate me for the fact that you will not be able to stop eating it. At all.
Recipe: Autumn Spice Chex Mix with Pecans and Cranberries
Ingredients
- • -3 Tablespoons vegetable oil
- • -½ cup popcorn
- -3 cups corn chex cereal
- -2 10 ounce bags of white chocolate chips
- -2 teaspoons cinnamon
- -1/2 teaspoon nutmeg
- -1/2 teaspoon ginger
- -1/2 teaspoon kosher salt
- -1/4 teaspoon cloves
- -2 cups candied pecans
- -1 cup dried cranberries
Instructions
- 1. In a large pot, combine the vegetable oil and the popcorn and put a lid on it. Heat over medium heat and let it cook until the kernels are popping with a few seconds in between. Remove from the heat.
- 2. Add the corn chex cereal to the pot and toss with the popcorn. Set aside.
- 3. In a large bowl, combine the white chocolate chips and microwave about 90 seconds and whisk until smooth. Add the spices and whisk until smooth.
- 4. Pour the white chocolate spice over the popcorn and chex and with clean hands, gently toss everything together to coat. Immediately sprinkle with the candied pecans and dried cranberries.
- 5. Pour the Chex-popcorn mix out onto a sheet pan to set up- this should take an hour or so. Store in an airtight container.

I used to make a chex snack years ago ~before I had to be GF,made with butter and broken
cashews~but i think they discontinued the chex~I LOVED IT and so did my dog. 🙂
I would make a batch and would be mt All day meal~was the days when my hubby traveled.
Think it had worceshchire in it.
