ok. You will either love me or hate me when you make this. Love me for the taste, and hate me for the fact that you will not be able to stop eating it. At all.

Recipe: Autumn Spice Chex Mix with Pecans and Cranberries

Ingredients

  • • -3 Tablespoons vegetable oil
  • • -½ cup popcorn
  • -3 cups corn chex cereal
  • -2 10 ounce bags of white chocolate chips
  • -2 teaspoons cinnamon
  • -1/2 teaspoon nutmeg
  • -1/2 teaspoon ginger
  • -1/2 teaspoon kosher salt
  • -1/4 teaspoon cloves
  • -2 cups candied pecans
  • -1 cup dried cranberries

Instructions

  1. 1. In a large pot, combine the vegetable oil and the popcorn and put a lid on it. Heat over medium heat and let it cook until the kernels are popping with a few seconds in between. Remove from the heat.
  2. 2. Add the corn chex cereal to the pot and toss with the popcorn. Set aside.
  3. 3. In a large bowl, combine the white chocolate chips and microwave about 90 seconds and whisk until smooth. Add the spices and whisk until smooth.
  4. 4. Pour the white chocolate spice over the popcorn and chex and with clean hands, gently toss everything together to coat. Immediately sprinkle with the candied pecans and dried cranberries.
  5. 5. Pour the Chex-popcorn mix out onto a sheet pan to set up- this should take an hour or so. Store in an airtight container.
