Angel Food Cake with Peppermint Whipped Cream

This has been quite a few days! I thought I was going to a “work dinner” with Pete last night, and it turns out it was a Surprise 35th birthday party that my darling husband arranged. I was VERY surprised. Then this morning I popped in at New Day Northwest for a fun and crafty Holiday Segment! Now it is a whirlwind of school pagents and play dates and last second Christmas shopping- aaaakkkk!!!! But I did take some time to slow down yesterday and make this cake.

Sometimes the most special recipes are the ones that have a really wonderful memory attached to them. For me, that is this Angel Food Cake with Peppermint Whipped Cream.

My Grandma Grace used to make this cake for my mom when she was growing up, and now my mom has made me this cake every year for my birthday since I was little. It is my very, very favorite.

Since it is my birthday on Saturday I thought I would share it with you. I know that you are probably thinking that this sounds bizarre, but I am telling you- each bite is like a fluffy little cloud of perfection! That angel food cake and pink, minty whipped cream is truly the most wonderful thing on earth to me. It is also so easy! My mom usually makes a homemade angel food cake, but you could certainly also use an angel food cake mix or buy a good quality angel food cake at the grocery store and just do the whipped cream.

This is what you do:

When your angel food cake is completely cooled, slice it in half horizontally.

Angel Food Cake with Peppermint Whipped Cream

In a heat proof glass bowl combine the starlight mints and 3 tablespoons of the heavy cream.

Angel Food Cake with Peppermint Whipped Cream

Microwave for 2 minutes and then whisk until it is smooth and creamy. Add 2 more tablespoons of cream and whisk to combine. Set the bowl aside to cool completely or put in the fridge to cool faster. Stir occasionally.

Whip the rest of the cream until frothy and then with the mixer running, add the peppermint cream in a thin stream and continue whipping. Beat the peppermint cream until you have soft peaks (this won’t quite get as stiff as usual because of the candy).

Put a generous amount of the whipped cream in the filling of the cake. Then frost the cake with the rest of the peppermint cream.

Sprinkle the top with the crushed candy and serve immediately or refrigerate until ready to serve. But if you are going to refrigerate then don’t sprinkle the candy on until you are ready to serve. The candy will melt in the fridge.

  • 1 Angel Food Cake (make a homemade or buy one at the store)
  • Peppermint Whipped Cream
  • 2 cups heavy cream
  • 40 starlight mints
  • 2 candy canes or 4 mints, crushed
