Angel Food Cake with Peppermint Whipped Cream
This has been quite a few days! I thought I was going to a “work dinner” with Pete last night, and it turns out it was a Surprise 35th birthday party that my darling husband arranged. I was VERY surprised. Then this morning I popped in at New Day Northwest for a fun and crafty Holiday Segment! Now it is a whirlwind of school pagents and play dates and last second Christmas shopping- aaaakkkk!!!! But I did take some time to slow down yesterday and make this cake.
Sometimes the most special recipes are the ones that have a really wonderful memory attached to them. For me, that is this Angel Food Cake with Peppermint Whipped Cream.
My Grandma Grace used to make this cake for my mom when she was growing up, and now my mom has made me this cake every year for my birthday since I was little. It is my very, very favorite.
Since it is my birthday on Saturday I thought I would share it with you. I know that you are probably thinking that this sounds bizarre, but I am telling you- each bite is like a fluffy little cloud of perfection! That angel food cake and pink, minty whipped cream is truly the most wonderful thing on earth to me. It is also so easy! My mom usually makes a homemade angel food cake, but you could certainly also use an angel food cake mix or buy a good quality angel food cake at the grocery store and just do the whipped cream.
This is what you do:
When your angel food cake is completely cooled, slice it in half horizontally.
In a heat proof glass bowl combine the starlight mints and 3 tablespoons of the heavy cream.
Microwave for 2 minutes and then whisk until it is smooth and creamy. Add 2 more tablespoons of cream and whisk to combine. Set the bowl aside to cool completely or put in the fridge to cool faster. Stir occasionally.
Whip the rest of the cream until frothy and then with the mixer running, add the peppermint cream in a thin stream and continue whipping. Beat the peppermint cream until you have soft peaks (this won’t quite get as stiff as usual because of the candy).
Put a generous amount of the whipped cream in the filling of the cake. Then frost the cake with the rest of the peppermint cream.
Sprinkle the top with the crushed candy and serve immediately or refrigerate until ready to serve. But if you are going to refrigerate then don’t sprinkle the candy on until you are ready to serve. The candy will melt in the fridge.

Ohhh, looks heavenly! (And it’s pink! Looooove).
I don’t like angel food cake but I really want to try this!
Really lovely, Heather! I can just imagine this with a cup of hot chocolate.
Mmmm. Peppermint whipped cream sounds soooo good 🙂
Happy Birthday! What a sweet surprise your husband arranged. 🙂 This looks wonderful, and reminded me of MY favorite birthday cake my mom used to make for me. Also angel food, also cut in half like that, but then filled with chocolate frosting with crumbled Heath Bars, and sprinkled with more Heath Bar crumbles on the top. Chocolate toffee angel food cake — yum! This peppermint whipped cream version looks just as wonderful!
Oh Terry, that is incredible! I love the idea of the Heath bars!
I love that peppermint whipped cream – dreamy!

I just made this today!! So simple, tasty, and special. I think we will be adopting this tradition from your family! Thanks so much for sharing!
I am so happy that you liked it Sharon!!
How much of the peppermint whipping cream do you suggest to add in? I’m planning to adopt a recipe and make my own hence the question 🙂
I’m not sure what you are planning Tessa, but I used all of it?
THANK YOU, so much for posting this recipe. My Mom made this cake for years when I was growing up. But, it was one of the recipes I didn’t ask her about before she passed away. I’ve been searching and searching for this. I’ve made it best to my memory, but it was never quite right. You so made my day!
Melody- that makes me so, so happy I can’t even tell you. Family recipes and the memories they create are priceless.
well, I really was hoping this would be great but unfortunately, it turned out to be a disaster…. the candies and cream just basically hardened like a rock and never stayed smooth and creamy. Sunk to bottom of the cream I was trying to make frothy. Going to plan B for the topping w/ the angel food cake. Clearly I did something wrong. 🙁
So sorry Laura, I wish I could be there with you to trouble shoot 🙁
Peppermint cream hardened on me and I only used 20 candies instead of 40, and same amount of cream
