I have been busy making merry every night. I have actually been a little too merry! With all of the holiday parties and my birthday, I am actually exhausted. But there is no time to rest, right?! We are in the home stretch! I am literally hitting the mall first thing Monday morning and going to finish up my shopping before doing a marathon grocery store trip. Is that how your Monday is shaping up too?

I am cooking dinner Christmas Eve and then helping with dinner on Christmas. Obviously I am crazy and I have already made detailed shopping and prep lists for both meals. In addition to the meal, I love to start “cocktail hour” with a special cocktail. Holiday dinners are just like a fun dinner party in most ways, so a signature drink is always appreciated.

Since there are the most beautiful persimmons in season right now (In Seattle I found gorgeous ones at Costco!!) I thought I would do a drink with them. I pureed them with sugar and then mixed in Vodka and Champagne for a festive and delicious punch! I hope you enjoy them! I will be back with another fast and easy recipe tomorrow on Christmas Eve. Recipe: Persimmon Crush

Ingredients

  • ½ cup persimmon, rough chopped (about 1 whole persimmon)
  • 2 tablespoons sugar
  • 1 tablespoon of water
  • 2 ounces vodka
  • 12 ounces champagne or sparkling wine, chilled

Instructions

  1. In a mini food processor or a blender, combine the persimmon and sugar and the water and puree until the persimmon is a fine pulp.
  2. Spoon the pulp into the bottom of two high ball glasses.
  3. Add the vodka and then top with chilled champagne. Serve immediately.

Preparation time: 10 minute(s)

Number of servings (yield): 2
