If any of you are like me and decided (like I do every year) that the last few weeks or months have caught up to you and that you are ready for some clean living, then this is for you. One of my most helpful tricks to getting on track is to eat. Like a lot. The only thing is that you have to eat really healthy stuff! For me that works best in the form of soups or salads. I looooove salad (I do, really) but the thing that makes soup so special is how you can make a big huge batch and then it lasts for days and days. You don’t have to worry about lunch or dinner, you just heat up your soup and you have an instant one bowl meal!
I have included 25 different delicious soup recipes here. Don’t be intimidated by the lack of fresh vegetables right now, soup is an excellent time to use flash frozen vegetables (like corn and peppers) once they have cooked into the soup, there will be little difference!
